Papa Murphy’s is a famous take and bake pizzaria, and while their pies are out of this world, so are the carb counts. Following is a gluten-free, low-carb pizza recipe sure to have people asking for seconds, and without straining an already tight budgets (or waistbands).
Better Than Papa Murphy’s Cowboy Pizza
1 cup cooked, riced cauliflower*
1 egg
1 cup mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
Mozzarella cheese
Pepperoni
chorizo
mushrooms, sliced
green pepper, chopped into chunks
red onion, chopped
topped with a bit more cheese
Preheat oven to 450 degrees Farenheit.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler (grill for the Europeans) at high heat just until cheese is melted .

This was gourmet,through and through. Any suggestions for me though, as my crust was not the consistency to pick up like a slice of dough would be…maybe the cauliflower was too watery? Thanks!

yes, you nned to wring it out in cheesecloth or some other type of cloth to get out all of the moisture.

COWBOY PIZZA
Take a piece of toast and slather it with catchup or barbecue sauce.
Put on a layer of sliced hotdogs, lunchmeat, spam, or whatever you have laying around.
Put on a slice of tomato and a slice of raw onion.
Put on a few slices of pre-sliced cheese.
Stick it under a hot broiler until the cheese starts bubbling.
Slide it off the hot plate onto a cool plate and enjoy.
