I say take two because it’s a similar cheesecake recipe to the ones we enjoyed at the cheesecake bar, but I’ve added some sour cream and lemon for added zip–but you might want to take two… This is still crustless, and the sweetener can be anything in equivalency to 1/2 cup of sugar.
Mini cheesecakes part two
3 8-ounce packages cream cheese
1/3 cup sour cream
1/2 cup sugar equivalent
1 Tbsp lemon juice
1 tsp vanilla
Preheat oven to 325 degrees Fahrenheit. In a mixer, whip cream cheese and sour cream for about 20 seconds on high speed. Add sugar substitute, lemon juice and vanilla, and mix for about 15 seconds on medium. Add eggs and mix until just blended, scraping down sides of the bowl.
Pour batter 2/3 full into cupcake liners.
Bake for 30 minutes.
