
Has someone given you the raspberries? You know what they say:When life gives you raspberries, make this amazingly bright and fruity dessert topping. What’s more, if someone’s given you a lot of raspberries, make pie filling! This quick cooking method produces delicious fruit topping. This one is my personal fave because the colors are so bright.
Raspberry Dessert Topping
2 cups raspberries
1/2 cup replacement equivalent for sugar
1 tsp (more or less) xanthan gum
Slightly mash berries in a heavy bottom sauce pan. Add sweetener and thickening gum.
Cook over medium heat to induce a light boil. As light boil commences, cook for five minutes, stirring occasionally, until thickened. Remove from heat. Let cool prior to serving.
Makes about 1.5 cups.
