Blueberry Dessert Topping

Top center: Am I blue? Not when I taste that topping.

Got blueberries? The perfect way to use these little berries of blueness are on a cheesecake of course! This quick cooking method produces delicious fruit topping. Simply make more for a decadent pie that’s not laden with sugar. Our friends loved this one so much, they kept the rest!

Blueberry Dessert Topping

2 cups blueberries
1/2 cup replacement for sugar
1 tsp + xanthan gum

Slightly mash berries in a heavy bottom sauce pan. Add sweetener and thickening gum. Cook over medium heat to induce a light boil. As light boil commences, cook for five minutes, stirring occasionally, until thickened. Remove from heat. Let cool prior to serving.

Makes about 1.5 cups.
