I miss my oven so much! It’s amazing how much you miss something you never clean or pay attention to until they almost catch fire. It’s like feet.
Not that I’ve caught those on fire. Recently.
See that picture? That is to be the amazing crock pot breakfast casserole I’m sharing Tuesday. I would share Monday, but I have three more cookie recipes coming your way, and I don’t want to flood you with cookies AND casseroles.
Of course, I might be persuaded with haiku…

I ate this:
Breakfast: Crock Pot Breakfast Casserole
Lunch: Skipped. I was too full from breakfast.
Dinner: Three small bowls of a new soup recipe (it’s that good)…
Exercise: Cleaning for sure. The stove incident left my kitchen messy. Which means about how it typically looks.
Notes: I am always so full after eating fat and protein, so it is hard for me to eat much more than I am now. I am a firm believer in eating when hungry and stopping when no longer hungry, so I don’t like force feeding myself food when I feel happy, satisfied and I’m losing weight.
What I learned:
Even though I had a carbier salad on Tuesday, today is Thursday and I’m down 4 pounds since Monday. How does that happen?
How can a few black beans, a few kernels of corn, a smattering of corn strips, and a few breaded jalapenos (to the tune of almost 40 total carbohydrates) result in a four pound loss?
Could it be that sticking to low-carbohydrate days of 20 net or less works for me when I keep my body guessing with slightly higher low-carbohydrate days? I guess we’ll see! My own experiment continues on.

You are so cool to let people come and stay with you! I like to keep my house kind of messy, and I am a control freak. I’m not sure I could be as open as you are. Plus my boys would have to wear pants. There would be protests.
I hate the posts that go out prematurely. I am so careful to double check, but I screwed up on this one. I feel immense guilt. Guilt! I do.

I had that happen last week. I was out of apples for 4 days. I eat apples and peanut butter for breakfast. Switched to very thinly can see thru it sliced sourdough bread and bacon and mozzarella cheese heated in a pan (think grilled cheese but with one slice bread). Ate that for 3 days and lost 4 pounds. Went back to apples & PB for 4 days, then bread & cheese, and lost 2 more. Go figure!

I had one when we were first married. It would be hard for me to cook for a lot of picky people with one now. There’s not enough room for all the disappointment a new cauliflower casserole would deliver unto them.

Hi there, Nalita! I am positive I am limiting calories most days. I don’t count calories, but for me, they do matter to a degree, absolutely. That might not be the case for others, but we’re all so different.So, no, I don’t count calories, but I do keep my carbohydrates low, save for on the days I up them slightly (it seems to keep the weight loss moving along at a steadier clip).
