Not so dirty… Dirty Rice

Back when I was a kid and I had the metabolism of a humming bird, I loved to eat dirty rice. Good ol’ southern cooking, it doesn’t get any better than that!

I remember running around all day, barefoot wearing only my older brothers hand-me-down bugle boy jeans that I cut off into shorts and no shirt. I ran wild like a cave woman in those days! We had to line up by the back door when it was time to come in for dinner and wait our turn to get sprayed down with the water hose before granted entry into the house. We would get filthy dirty, but we had fun! Needless to say after a day of playing hard I was starving, and the smell of grandma’s dirty rice made me drool.. I couldn’t get cleaned up fast enough! Fast forward 20ish..or 30ish years and that humming bird metabolism is no where to be found. Actually, I must have passed it through my womb into my daughter during birth because I have not seen it since and she is a bean pole and eats like a full grown man. Point is, I can no longer eat grandma’s good ol’ southern cooking, not exactly how she made it at least. I do however still crave those spicy delish dishes! So behold.. here is the “Not so dirty… Dirty Rice”

1 Pound ground chicken

1/2 Head of cauliflower (grated)


1 Jalepeno (chopped)

1 garlic clove minced

1 Tsp cayenne pepper

2 Tbsp EVOO

1/4 Cup chicken broth

Brown the ground chicken in skillet with cayenne pepper.

In seperate skillet add grated cauliflower, chopped jalepeno, minced garlic, and EVOO. Sautee for 5 min.

Add the chicken broth and ground chicken into the skillet with the cauliflower, and mix all together.

Cover and hit it to high heat for a minute or two.

Turn the heat off and keep the lid on for 3 minutes allowing the broth to be absorbed.

Get your plates ready.. uncover and inhale the yummy aroma of the Not So Dirty Rice you are about to scarf down!

Serves 4:

220 Calories. 5 Carbs. 19g Protein.

  1. That sounds awesome!!! Do you just use a cheese grater? If so, the big grate or the smaller one? I can’t wait to make this!

      You can use a cheese grater or even a food processor for the cauliflower. It is more of a personal choice how big or small you want your cauli rice to be.

  2. Jamie, I can’t wait for my ground chicken to thaw. Looks like I will be chowing down way before dinner time and it can’t be soon enough for me. I have missed my “real” dirty rice but I like a “real” cleaned up version. Thanks

  3. Sounds good. Being from the Deep South myself, I’ve done LC dirty rice, but with ground sausage, not chicken. I’ll have to give it a try, too. Thx!

  6. Sounds yum but what’s EVOO? I’m out in Nairobi, Kenya and I don’t think we have that here! Could you suggest a substitute? Many thanks,

      Hi Chansa! EVOO is Extra Virgin Olive Oil. If you do not have that available to you, use the cooking oil of your choice but keep in mind the caloric value may slightly change, but nothing too major:)

  7. Never heard of Dirty Rice before, but it sounds delish. I’ve noticed a number of your recipes lately have the ingredient EVOO. Would you please explain what that is? Maybe I missed a post earlier when you talked about it, maybe? I’m an Aussie and can’t say I’ve ever heard of it.

  8. What, no chicken liver? LOL Girl, don’t you know Cajun dirty rice always has chopped chicken liver? Just kidding, really. I’m not so fond of it in dirty rice either, so I’d like you version MUCH better. LOL I’ll have to try this!

      Oh my grandma definitely used chicken liver, but my version is the cleaned up on 😉

    This is absolutely great. I added salt, pepper, cajun seasoning and a litlle more of the cayenne and I loved it. I thought when I was fixing it “This better be good ” because the cauliflower is a pain to “rice” but it was definitely worth it! Thanks for a super recipe.

  13. Just made this. Was suppose to go with dinner but 1) was way too spicy for my husband and 2) I was too hungry to wait until dinner! We had smoked a couple chickens so instead of ground chicken I used chopped up leftovers. Gave it an awesome flavor! I ate two bowls. Guess I will be having a small dinner and husband can heat up a potato with his 🙂 (I’m going to make this as a dish at the next party/get together—this is sooo good!!)
