Need cheese sauce? What’s a world without cheese sauce? Perfect for macaroni and cheese, nachos, soups, broccoli, and chili cheese tots (to name a few), this recipe is easier than zapping some block cheese food in the microwave and hoping it doesn’t explode, and you know what’s in it, since American Cheese can be purchased in slices at the store as below:
WalMart sells this cheese, but I have seen slices like this at other stores. Look for sliced Pasteurized Process American Cheese, non-wrapped (you could use wrapped, too, if the carb counts are similar… these are less than a carb per slice, so I’m figuring them at .75 per to be on the safe side). This sauce is absolutely perfect for nachos, quesos, chili cheese tots, covering veggies, you name it!
American Cheese Sauce
2 Tbsp butter
2 Tbsp heavy cream
2-4 Tbsp water
4 ounces American Cheese (Can be slices, diced)
1/4 tsp salt
In a small saucepan over medium heat, melt butter. Add cream and 2 Tbsp water. Add cheese and salt. Cook, stirring occasionally, until cheese has melted and all ingredients are well blended, about 5-10 minutes, adding a Tbsp of water as needed for the proper consistency.
Can be reheated in the microwave. Simply add a Tbsp of water, heat and stir.

Makes about one cup, or about 4, 1/4 Cup servings

Can you substitute with another cheese, like gouda?

Great stuff! I found I didn’t need any extra water. In fact…I added one extra slice of cheese and a tsp of garlic powder and a liberal dash of Italian seasoning! It was fantastic. Thanks for the recipe!
