This super-simple jerky rub is perfection for that hammered-down inexpensive thin-sliced steaks with less fat on them (fat goes rancid). Simply hammer the meat, toss this rub in a bag, and go to town!
The rub adds not only a lot of flavor, but a ton of color, too. It’s just as fun to eat as it is to look at.
Tip: Want to make this Atkins induction friendly? Skip the lime juice.
Chewy Jerky Rub
1 Tbsp chili powder
1 tsp coriander
1 tsp sea salt
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp fresh milled pepper
2 Tbsp lime juice
Combine dry ingredients. Rub into pounded steak. Place in a bag for 3-24 hours with lime juice. Dry in a dehydrator until the meat is bendy-crisp.
Covers three pounded out steaks, or about 1.5 pounds.

My husband and I love jerky we are going to try this one tonight or this weekend. Heck I have everything but the meat at home to make it. What kind of steak did you use? Skirt steak? Also can you tell me where the carbs are coming from? Is it the limes or do the seasonings have that many carbs in them? Thanks for the great recipe!!!
