I just whipped this up on a whim tonight and wanted to share this super easy recipe!
Preheat your oven to 375F
Chicken thighs~ Trim the fat off and tenderize
Bacon~ Wrap around the tenderized chicken
Place the chicken wrapped in bacon on a foiled cookie sheet. Drizzle EVOO over them and season with cracked black pepper. Let bake for 40-45 min.
Turn your broiler on High
Asparagus~ Wash and cut the bottoms off
Roma tomatoes~ Slice ’em up
Honey bunch grape tomatoes (yellow ones)~ Cut into tiny spears
First place the asparagus on a foiled cookie sheet. Place the sliced tomatoes on top. Put the yellow tomato spears along the sides of the sheet. Drizzle with balsamic and sprinkle kosher salt on top. Broil for 10 min.
A delish and pretty meal in under an hour! Enjoy 🙂

Do you take the chicken wrapped in bacon off first before you put the veggies under the broiler?
Yes the chicken w/ bacon takes the longest, 40-45 min. SO that goes in first. The veggies only take 10, so they are last. I take the chicken out and put the veggies in while I set the table and get drinks ready. By the time I am done with that the veggies and done and I plate the food and it is time to chow down 🙂
They both sound wonderful. How do you tenderize the thighs? I’m so glad to find more recipes with thighs and NOT chicken breast. I do not like white meat unless it’s really disguised, flavored, etc! Your ideas and recipes are the best! Thanks for all your work.

I put them in a brown paper bag and lay flat on the counter and just hammer away 🙂 I really like chicken thighs too. It gets old having the breast all of the time.
