The Super Bowl is right around the corner. Why not try a few fan-friendly snacks made with heart healthy pecans?
Pecans can be a heart healthy benefit to any dish because of their abundance of good, healthy fats. These fats can have a protective effect by lowering total blood cholesterol when eaten in moderation. Besides, who doesn’t love a little nutty goodness, especially during the biggest game of the year?
So swap your usual football foods for some heart healthy recipes, like my version of this easy Chili Cheese Log with Pecans recipe from the National Pecan Shellers Association!
Tip: Save time and money by purchasing chopped pecans.
Bacon Cheese Poppers with Pecans
1/2 cup Rotel (or canned chili peppers, tomatoes and onion)
16 oz. cream cheese (softened)
½ c. pecans (chopped)
6 slices cooked bacon, chopped
½ c. Monterey Jack cheese (shredded)
Mix Ro-Tel with cream cheese. Let cool for 30 minutes. Shape into balls and coat with pecans, bacon, and Monterey Jack cheese. Chill until firm. Serve with toothpicks.
Makes 16 poppers.

You can use chopped chili peppers and tomatoes and onion instead. Ro-Tel also includes a few spices you, like, I believe, chili?
A bit dense here, I guess…what has to “cool” when I add the cream cheese and Rotel ? I do get the ” chill” part later in the directions…and it looks great! Thanks for your recipes and your great spirit of sharing with us all!
Hi there! Add the Rotel to the cream cheese and then let solidify a bit before forming into balls and rolling in the nuts, cheese and bacon. It’s really fun to make these!
I think she means because the cream cheese has to be softened, it might be a bit warm after microwaving… so let it cool a bit before adding the rotel
