Oy! Yummy!
Remember those really cool mini meatballs I shared with you on Wednesday? Now you need to make these chipless nachos in the microwave in just another 30-40 seconds!
Tip: To save a carb, cut back on the onion.
Did that sound really bossy? You have to try this because it is so cute and so delicious. It is like a salad and because you only microwave long enough to melt the cheese, the lettuce never wilts.
Look at all of that color and delicious toppings. Don’t tell me you don’t want to try this. And just a minute or less in the microwave? That is so simple for cheesy, crunchy lettuce on your tongue in no time.
Easy Minute Microwave Chipless Nachos Platter
12 mini meatballs
1-1/2 cup shredded lettuce
1/2 stick pepperoni sliced
4 green olives sliced
1/8 cup chopped onion
8 jalapano slices
1/2 cup shredded cheddar cheese
Make a ring around the edge of a microwave-safe plate with shredded lettuce, leaving the center open (the condiments go in the center). Top with meatballs. In between meatballs, place pepperoni. Now top with green olives and onion. Top with cheese. Microwave for 45 seconds to one minute, or until the cheese is melted but the lettuce is not wilted. Top with jalapeno slices.
For a condiment, use sour cream or fresh salsa.
Makes 1 plate of happiness.

Here the lettuce is placed around the plate just so. This way you can fit a bowl with condiments in the center. You could also elect to just fill the whole plate with lettuce.
This is the lettuce now topped with meatballs and the pepperoni stick slices. I cut the pepperoni slices on a slight angle for more of an ovoid effect.

Hi, Vikki. I go at it with a fork. You can do the condiment one of three ways: 1. Spread it evenly over everything before eating; 2. Dip the forked food into it; or 3. Dip your fork and then grab your food.
