Better Than Crisp Bread Flax Cracker
2 Tbsp flax seed meal
2 Tbsp water
spices to taste (optional)
In a bowl, mix flax seed meal with water and spices (I use a fork). Let rest 2-3 minutes.
On a piece of parchment, press and gently spread the mixture with a fork, until the shape desired (usually a 4″ X 8″ cracker, but can be round or other shapes as well). Microwave for 2.5 minutes or until cracker is solid.
Let cool.
Top with cream cheese, taco dip or anything you might be hankering for.
Makes one cracker.
Tips: I reuse parchment paper to make more crackers.
The crackers store beautifully when loosely bagged, so you can make some for the road.

Nutritional information: Technically, this is almost 0 carbs per cracker due to fiber, but you should count it as 1, just to remind yourself that with great food comes great responsibility.

Hey there! The calorie count for 2Tbsp is right on. It's 60 calories if you use Bob's Red Mill. I am guessing I was using a higher fat flax when I wrote the recipe?

I would love to make these, but I am microwave-less. (I just don't like the taste of microwaved food.)
Any suggestions for baking? I have a toaster oven & a regular one. I think that I will start with a 350 oven for about 5 min & go from there.

This is going to be one of those questions where you worry about the asker but… are some flax meals less… flax-y… than others? I tried one brand and used it for one minute muffins and a disaster of a pizza crust… wasn't a fan. Are all flax meals about the same or should I get out there- plenty of flax in the sea!- and try others?

Hey! That's not weird at all. You could add, instead of water, a liquid Davincis syrup to get sweetness and flavor, and schmear the top with low carb chocolate glaze.

don't know if u ck posts this far back, however, first of all, I am so over thrilled with finding ur blog!! I am going to be making the cauliflower pizzas, taco shells, quesedillas, doritos, calzones, lasagna…basically all those zukes and cauli doughs!! We aren't really on a low carb diet, but I have young children and I want to give them as many veggies as possible, so ty ty ty ty for posting and sharing all these wonderful recipes!!
Now my ?, is w/the Flax Cracker, I want to add some veggies, how would u add them or would it add too much moisture? Was thinking of shredded carrots, zukes, cauli. And maybe another version of adding some sun dried toms and rosemary and basil?

If you wanted to add veggies, you might also need to add more of a binding agent. Flax is pretty good stuff, but adding acids like sun-dried tomatoes, might make things not hold together as well. This way you have a binding agent, too.

It shouldn’t stick to your parchment. Did you use wax paper by accident? I have had things stick to wax paper. Tee hee!

Hi, Heather! You can definitely mill your own flax into meal if you have a mill (you need add nothing else to it). Those crackers are so easy, it’s hard to believe they’re just flax seed meal and water!

Hey there! I add no spices to the basic flax cracker (I’m lazy and I like mine plain). You could add your faves depending on your mood. Oregano, basil or chives, parsley or pepper, anything you’re in the mood for can be added in! Start with less to taste and add more as your taste buds allow.

These are great! Savory: I put in a little garlic powder, salt, and Italian seasoning. Put a little warmed (for easy spreading) cream cheese. Delicious! Next I tried sweet: I added a little xylitol and stevia, cinnamon, maple flavor and topped it with cream cheese and some finely chopped, toasted pecans. Folded it over and my husband said it reminded him of one of those oatmeal creme sandwich type cookies.
Oh my goodness, Joan. That sounds so delicious. I love your inventiveness. There’s something about that combination of ingredients that sounds so nice, especially during winter, when you could use a little bit of “savory” sweet. Brilliant!
My mother preferred her crackers “puffy,” but I enjoyed them more when the flax goop was spread super-super thin. I used a garlic-herb-salt grinder from the grocery store and used eight “grinds” of seasoning for a 2 Tbsp recipe, and it came out just about right.
