Papa Murphy’s is a famous take and bake pizzaria, and while their pies are out of this world, so are the carb counts. Following is a gluten-free, low-carb pizza recipe sure to have people asking for seconds, and without straining an already tight budgets (or waistbands).
Better Than Papa Murphy’s Cowboy Pizza
1 cup cooked, riced cauliflower*
1 egg
1 cup mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
Mozzarella cheese
Pepperoni
chorizo
mushrooms, sliced
green pepper, chopped into chunks
red onion, chopped
topped with a bit more cheese
Preheat oven to 450 degrees Farenheit.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler (grill for the Europeans) at high heat just until cheese is melted .

You did not include the ‘sauce’ in the ingredients. What sauce do you recommend? Do the carb count of 2 net carbs already include the sauce?

I just use store bought sauce and yes those nutrient facts are added up on the total counts.

I tried this recipe last year and it is terrific. I also found that you can make smaller pieces and use them in place of bread with meals such as substitute for toast or crackers with a salad. Also substitute for tortillas.

I have difficulty “ricing” the cauliflower. Is there an easy way to do that? Can it just be chopped in a food processor?

I recently saw an easy way to rice cauliflower that I haven’t actually tried, but there was a video and it looked kind of like a miracle. Put the cauliflower in chunks into a blender and fill the blender with water. pulse until you can tell it is riced and strain. Took her about 10 second on the video.

You know…..I make my kids buffalo chicken pizza with ranch salad dressing and white meat chicken and mozzarella cheese (a little cheddar too)
