Ham. If you had ham for Easter you likely have some of the venerable white meat leftover for other uses.
Try making this easy Benedict dish and enjoy your ham, eggs and mayonnaise in a different way!
A few things:
- Count carbs as one per egg in this easy, fun dish.
- A glass or circle cookie cutter makes the shape of the egg perfect for your ham or Canadian bacon slices.
- Double your egg amounts to make fluffier, thicker egg patties for your breakfast. You can store the extras for later!
Eggs Benedict
2 Tbsp butter
1 egg
Ham slice
Lazy Hollandaise Sauce
Over medium heat in a small pan, scramble egg in heated butter, careful to allow egg to form into a solid mass through cooking and less manipulation (if you have an egg ring, you can use that instead). Flip eggs once to complete cooking. You will likely need to fold egg in half to achieve height after cooking, or fold several times. Allow egg to cool slightly, about 2-3 minutes. Using a glass or circle cutter with the width of your ham (or cut your ham to fit the egg diameter), cut egg to resemble muffin. Place on top of ham. Cover with Hollandaise sauce (below).

I am so glad you liked it! I love that sauce…
Mmmmmm you said hollandaise.
You said LAZY hollandaise.
SCORE!
Hugs girl and hope you had an awesome and blessed Easter!
Thank you, my Susiemama! When it’s lazy, I go crazy.
I have to tell you about a wonderful product at Trader Joe’s! It’s Hollandaise Sauce- 0 carbs. Keeps in the refrigerator and you just take out as much as you need per serving and microwave just seconds! Fantastic for Eggs Benedict, asparagus, broccoli, just makes everyday “special” and no work. Found in the refrigerated section where the eggs are.
I am sitting here, at work, with a low carb protein shake, reading this and my mouth is watering!!! Or as I like to say to my daughter and totally gross her out, “My tongue just peed in my mouth!!”
I think I will try this for dinner tonight!! I love eggs benedict and didn’t think I could have it low carb!!! Who knew?? Thanks, Jamie!!!
LOL! Peed in your mouth! I hope you like this recipe. The hollandaise is just so good!
Hi! Do you think you could use an oopsie roll in place of the english muffin to give this more of a real eggs benedict feel?
I think you could, but it might be disappointing since oopsie rolls tend to be less dense like an English Muffin. You might try, instead, to make a deep dish chicken crust pizza (also on the site as gluten free deep dish pizza), cut it into rounds and use that denser bit of cheese/chicken bread instead.
