This Hot Tuscan Chicken Salad got lost in the move from my old site to this one, but thanks to a friend, it is again found!
I have added the nutritional information. To save carbohydrates and calories, use 3/4 cup ramekins (or a big casserole dish) and divide out servings that way. I’m a cheap date. What can I say.
Hot Tuscan Chicken Salad
2 cups cooked chicken
1- 6 oz jar artichoke hearts chopped
1/2 cup cooked bacon chopped
1/3 cup chopped sun dried tomatoes
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
1 cup mayonnaise
2 Tbsp grated purple onion
1/4 cup mozzarella cheese grated
1/4 cup Parmesan cheese grated
Preheat oven to 400 degrees F.
Combine ingredients except cheese. Toss lightly. Pile into 4 individual baking dishes (1 cup ramekins). Sprinkle with grated cheese. Bake for 10 minutes.
Makes 4 servings.

Hi! Just have to say, I finally made this, and it is SO good. To cut down a little on total calories, I used a half-cup mayo and a half-cup greek yogurt, instead of the full cup of mayo. (I figured only baking for 10 minutes, the Gr yogurt would be OK, and it was.) Also, wasn’t sure about the half-cup of crumbled bacon (who measures bacon with a measuring cup, LOL!), but I used six slices. OMG, fantastic dish, this will definitely be added to the rotation from now on. Thank you!

Remembered this tonight and cleaned out the frig. I also cut the mayo and used some cottage cheese I needed to use up. It looks amazing and I’m about to pull it out of the oven on a cozy rainy day and serve it with some asparagus cuts. THANK YOU! YUM!
Has anyone used this as a dip. Maybe process chicken and artichoke smaller? Pork rinds or almond crackers for dipping?
Can this be frozen?
I found your site yesterday looking for a use for some seriously overcooked chicken roulades with ricotta and spinach. I made the Easy Crispy Pizza Crust last night and fell in love – I am gluten-free. Brough leftovers to work for a friend on Atkins – so two new fans!
