It is flipping windy here. It’s the kind of gustapalooza that has even a woman of large size like me hanging onto things in an effort not to blow away it’s the underarm flaps).
Mondays are excruciatingly busy at this moment,l so I apologize for my tardiness in writing.
Almost STOPS at TOPS
You know those weeks when you’re losing inches but you know you’re going to be squeaking by on the weight loss? Welcome to my world, honey! I was concerned about stepping on the scale this week and knowing I’m pretty close to either being exactly the same of gaining due to the usual pauses when the stall in weight occurs but while the inches are shrinking away.
Still, try explaining that to the ladies who want to be done with me so they can go and sip coffee and discuss whatever they were discussing before I slid into the room with my socks.
I managed to lose 2.25 pounds this week, even though my birthday was Saturday and I enjoyed some high-sodium fare. It was a good thing. It’s hard being the fastest loser because you’re trying to blend in (being the new person) and you don’t want to create any issues with folks who aren’t losing much–if any. So many of them are close to goal, but a few have some to pudge to budge, so we’re all working towards those same goals.
NO SOUP FOR YOU!
I was going to make some Wisconsin Broccoli Cheese Soup (On Wisconsin!), but when I was rummaging for the ingredients, I realized the broccoli was shaped like green beans and not at all like broccoli. I didn’t want to make cheese bean soup. Not that there’s anything wrong with alternate vegetables in cheese based soups…

As far as the green beans go, you can make LC green bean casserole using alfredo sauce and grilled onions.
Your success is great – and inspirational – losing 30+ lbs in one monthish is great.

Ok now you have me thinking that a cheesy green bean soup might just be good with a little bacon and onion added for flavor. Congrats on more weight lost. Me, still in a stall since Christmas…grrrrrr. But It’s happened to me before. Last time was almost 4 months the suddenly it started melting off for a week or two before settling down to a normal 1b or 2 a week.
First off, you have hits on your blog because of your wit and fun look at life! I think sometimes we all get to wrapped up in ourselves to see the humor in each day – tank goodness your grounded – thanks for taking one for the team. 🙂
Next – I have no idea what you going to do with the green beans, but speaking for all of us in Green Bay – thank you for not putting them in WI Cheese soup!

Thanks so much for the kudos and the recipe cred! I still can’t believe that a kitchen mistake has been so popular. When I actually try things (I’m not even touching the time I tried making taco salad with sauerkraut), they tend to be a little gastronomically weird.
I am going to Super Target today to get a hold of some broccoli. I also have to return the freak Bratz Doll and weird Alpaca horse I wrote about in December under the “Bratz Dolls are a Freak of Nature” entry.

I am so proud of you for hanging in there. It really says something. Many folks stall out and quit– but you stayed there and kept fighting onward, knowing that weight was going to come off.
That is really the success, right there. The weight loss isn’t nearly as important as the mindset.
I am thinking about your and stella’s ideas regarding the green beans. I think you both have given me an idea!

The last time I stood up, the state of Utah asked me to sit down again.
I have made the following recipe for a potluck. It was pretty good. I used frozen string green beans, because I just don’t like the cut green beans – they never seem to get tender for me! Leave out the fried onions for low carb.
This classic side dish is updated in two ways. First, alfredo sauce is used instead of canned condensed soup, and the recipe is cooked in the crockpot. Easy!
INGREDIENTS:
28 oz. pkg. frozen cut green beans
1 onion, chopped
1 cup roasted red bell pepper strips, chopped
1/4 tsp. salt
1/8 tsp. pepper
10 oz. container Alfredo cheese sauce
2.5 oz. can french fried onions
PREPARATION:
Combine all ingredients except half of the french fried onions in a 4-6 quart slow cooker. Cover crockpot and cook on high for 3-4 hours, stirring after 1 hour. Just before serving, heat remaining french fried onions in a small skillet over medium heat for 2-3 minutes, stirring constantly. Stir beans and cover with onions.
