Some might say losing weight while eating a low carbohydrate, gluten free diet is difficult, but it’s pretty tasty–and easy.
There’s nothing quite like Italian nachos. Emulating my favorite pizza joint’s recipe, this easy dish is just popped under the broiler and oozing with delicious cheese and fresh toppings like artichoke hearts, tomato, pepper, onion and meats in minutes! Recipe will be coming in the near future.
I just just had these amazing gluten free waffles (recipe here) last weekend with Davinci’s Pancake Syrup (Buy at the link. Affiliate ho) this last weekend. While I plan to work with the recipe some more to perfect the texture, these had everyone fooled, high and low carber alike!
Pizza salad is so easy to make. Just toss Romaine with your favorite pizza toppings and you’re off to the races. A fantastic way to sneak those greens in without feeling the lettuce pain.
It’s hard to go wrong with a batch of oopsie rolls, regardless the occasion. These can be used for anything from McMuffins to mini pizzas to burger slicers. Did I mention all of the above are induction friendly? Well butter my bacon and call me moopsie.
As you can see, eating a low carb diet doesn’t have to be boring and lifeless. Find what you loved most when you ate a high carb diet and make it work. If you’re missing anything, let me know. I might be able to come up with a low carb version that works for you!
So here is my question about oopsies: I can never get the whites stiff enough and the whole thing spreads out on the pan like a brownie batter. I had accepted this was the case and just made one giant oopsie roll and cut it into squares after baking, but looking at this pic, yours are SO pretty! So, do you use a regular old hand mixer to beat your whites? Or do you use a heavy-duty stand mixer? And is that likely my problem?
Rachel are you using a hand held electric mixer or just one you use turn yourself. I have only used a stand mixer and the whites stiffen up very nicely (usually!lol). Also, what kind of bowl are you using? Plastic or metal? Plastic holds on to stuff that you have previously put in it and will affect the whites. I put my metal bowl in the freezer along with the beater for a little bit.
Rachel, I use a copper bowl to whip mine. It works wonders. I also make sure everything is cold and the eggs are fresh. The bowls can be expensive but I found mine at the thrift store for a couple of bucks.

omg, I have just starting trying out the low carb thing and I've been reading your blog since yesterday! It hasn't left my screen all day. 🙂 I live in New Zealand, so I'm not sure if i'll be able to find everything that goes into your recipes, but I wanted to share my creative dinner making from tonight. I could NOT think of anything to make and really was craving pizza or tacos. I mashed some cauliflower with a little bit of colby cheese, topped this with seasoned chunks of chicken breast and slices of chorizo, Salsa, mozzarella. HOLY YUM!! It was so good and my fiancé loved it too and he's not on any diet really.

Folks,,, I have a tip I have used my whole life. I used to make angelfood cakes by hand..no mixer. yikes no more..hehe..
beat the whites till very nice and fluffy.. now take that bowl and START to turn it upside down.. if the whites begin to slide, stop and ..beat more…when they are stiff
YOU CAN TURN THAT BOWL UPSIDE DOWN AND THEY WILL NOT COME OUT.
this is the only test I have ever heard of.and it works each and everytime..soo . Thank You Momma..

You might like my waffle recipe. It uses coconut flour but you know a little goes a long way (not sure if you use coconut flour). Just omit the honey/maple syrup (I do for mine):

I really need to try these Oopsies because I was telling my fiance about them and he hasn't been as dedicated to the induction phase of low carbing and has since BEGGED me to try to make them so he can battle his bread and bun cravings..lol.
I really have enjoyed eating this way. I haven't had many cravings really, I eyeball people's plates when dining out or going out somewhere but I feel GREAT and am hopeful that I will continue down this road for a long time.
