More friendly than a stray dog–and tastes better, too.
Is it chili outside? It is in here.
Thick and substantial, this holds its own as a side (top center in the picture) or as a flavor-filled funapalooza atop a hot dog, a burger, or for any chili-respecting recipe.
The ingredients are common, though Ro-Tel puts some added excitement (one can choose the spicy Ro-Tel for a punch to the taste buds, or use mild or medium, as tastes will allow) into the meaty goodness.
So what do you say, folks? Yee-Haw? Darned Tootin!

½ cup minced purple onion
2 cloves garlic

Tried this last night and it was excellent! I did leave out the onion and garlic, but it still tasted great. Thanks for the recipe!
Hi what is Rotel and in what section of the grocery store would I buy it. Can I add SF Tomato sauce to the mix. Thanks Rae
Hey there! Ro-Tel is in the canned vegetables section with the chopped tomatoes. It contains peppers and onion usually and comes in mild regular and spicy. You could add some Tomato Sauce. I really like WalMart's Great Value Pizza sauce since a little goes a long way.
I didn't have any rotel, so I used a can of petite diced tomato, small can green chilis, and added extra onion. I only had half a tbsp of regular chili powder left so I used chipotle chili powder for the rest. Turned out great!
I like using this for my taco salad.
I just made “Yer Darned Tootin’ Chili!” It is delish! I was unsure about putting unsweetened cocoa powder in it, but it’s perfect. I also used the Chili Rotel and doubled the recipe. My low carb lovin husband will be shocked when he gets home. I never cook, but I have been getting bored with my low carb choices lately. Thanks for spicing up my taste buds! I feel like a chef and can’t wait to try your other recipes.
Yum,
Shannon
I am so glad you took the chance on the chocolate. I was like whut?! when I heard mole was made with chocolate, too., but it adds such an earthy flavor to offset the acids…
Eden organic foods…
They have wonderful black soya beans…high protein,
Low carb, high fiber!
Added to chili …they are the bean!
And to speed cooking…
I use medium salsa…sparingly…but it has all the celery,
Green peppers, etc already in it!
I do add more chili powder spice…lots for heat!
This is wonderful!
OMW….sooooo good!!!! I just made this and think I could eat the entire pan! (I’ll try not to. lol)
I wonder if the cocoa makes it so addicting, but I just love it. I tell everyone else it has cauliflower in it so they don’t hork it all and leave me nothing but a dirty spoon and an empty dish.
Oh my goodness, I made this last night. I am so blowed away, I really am. This was my first Lighter Side recipe that I’ve made and it was so delish! I have leftovers and can’t wait.
Yay, Erica! I am so glad you like this. This is seriously one of my favorite recipes. I even make extra and freeze it so I always have some on hand.
Oh this is incredible! And easy to take to work, thanks so much 🙂
Carey, you are so welcome. And it’s so so versatile, too. I really love it so much!
OMG I am so making this! I wonder how it would be if I browned the ground beef and then threw everything in the crockpot…
Hi! I have done that and it turns out marvellously.
Oh, excellent! I’m making this this weekend then!
Tripled this recipe, put it in the crock pot, and OH. MY. GOD. It’s FANTASTIC! Topped it with a little cheese and it was a bowl of pure heaven. This is definitely going into my rotation!
I am so so happy you like that recipe! That is literally my favorite chili recipe ever, and I make it fairly regularly.
I can’t wait to try it today after it’s had time to “marinate” in the fridge. Chili is always better the second day. I’d take some to work to share but I doubt there will be leftovers. 😀
I agree. It’s also pretty good, even when you freeze it and then thaw and heat it again!
OMG Had some for lunch and now I’m telling all my friends they need to give it a try. It is sooooooo good the second day!
I am so happy to hear that, Daghain! I am really addicted to the stuff. Add the littlest bit of chopped, crunchy onion, cheddar and sour cream to the top and seriously…
I browned the meat on the stove and added chopped green bell peppers and celery. Doubled the recipe too. Put it all in the crockpot and its simmering now. It smells wonderful. We will have this for dinner tomorrow. Thank You Jamie! 🙂
You are so welcome, Celeste. I hope you love the recipe as much as I do. It’s my favorite chili.
My favorite chili recipe ever. Thanks so helping add some variety to my low carb life!
I am so happy to hear it, Amanda! Wait until you see the new one I have coming up soon, though. I am really excited about it.
I freaked out when I had a link that didn’t work for this recipe. All is resolved and my roast that didn’t turn out so yummy is now a pot of delicious chili on my stove.
I am sending you a virtual pat on the back!! This chili is so delicious! I did customize it a bit by subbing curry for cumin and adding some ground turmeric and paprika. I also used ground turkey and Muir Glen fire roasted tomatoes since their can is BPA free. I couldn’t add the onion because mine had gone bad! But wow! So yummy and great! During the week of Valentine’s I add chocolate into our dinners and this will be perfect! Definitely will become a regular! 🙂 Thank you!
You are very welcome!!!
Hit the craving spot and you can’t tell it’s low card ahhh I won’t tell my family either
This was really good and easy to make. I did forget to add the garlic though.
