I was wondering if anyone has any soups made with ground beef found a few elsewhere but too high in carbs and sugar for me.

Yes, I have at least two recipes…
First…make a batch of very mini meatballs,..seasoned with salt and pepper.
Fry them until browned…set aside.
Vegetable Soup…
Pour a quart box of beef broth into a pot.
Add mini meat balls…lots of them…but still leave a fair amount of liquid broth.
Add one small sliced white onion
Add one finely sliced celery rib
Add one very small carrot, sliced very thinly!
Season to taste with s & p and your favourite herbs.
Simmer
For body, sounds strange, but it thickens…one-two Tbsp of grated Parmesan.
In your individual bowls…adds saltiness and body,.
That is it. The small amount of veggies are for flavour and eye appeal.
Almost zero carb.

Straciatella….plain or Stratiatella Florentine with Spinach.
Btw can have mini meatballs added!
I use about 1 to 11/2 cups chicken broth for one person.
For this amount of chicken broth…beat one egg well, with a fork.
Add 1 Tbsp of grated Parmesan and a splash of cream…about 1 Tbsp.
Grate a generous grating of nutmeg….say 1/8th tsp. And a dash of s & p.
Beat the egg and all this very well.
Bring the broth to a rolling rapid simmer,
Stream the egg into the broth…whisking the broth with the fork…(like egg drop soup)
This will turn the egg to noodle like ribbons.
Simmer about 1 miniute to make sure the egg cooks, it will puff up as it cooks.
Simply whisk with your fork.
This is the real plain Stratiatella recipe.
Add baby spinach to make it “Florentine”
Add the mini meat balls…as so many Italians do.
Or Add both.
This is great for a light lunch, ultra low carb…low cal…and delicious!

Those look amazing! I can smell them in the crock pot already…
Sorry everyone….these are not for the crock pot! These are the fastest soups in the world! Just use a 2 – 3 quart saucepan and you are in business!
The meatball soup takes less than opening a can would…if the meatballs were all made in advance! While the broth is heating…finely chop the veggies…then simmer through!
The strachiatella cooks in the time it takes to bring the broth to a rolling boil and two
minutes to cook the egg mixture!

You do not need a crock pot for pizza.
But how about a quick zero carb pizza or calzone? I had is last night! Superb…when you really crave pizza….but do not want carbs.
What you need is a small non stick frying pan….about 6-7 inches wide. I will write the procedure step by step.
1) Place non stick pan over med heat. Cover bottom of pan with grated Mozza or Mozza/cheese blend….and once the bottom is covered….do not touch it. Simply leave it alone and allow cheese to melt. Besides you will be preparing your pizza toppings.
2) As cheese is melting…I top it with…a generous sprinkling of oregano….lots of it…and hot red pepper flakes…then come the toppings…..(these are my favourites!) pepperoni, sliced green olives, onion, green pepper. You can add any low carb pizza topping.
3) By now the cheese should be golden brown on the bottom…lift a small edge and take a look…if it is not the colour of say, “unsmoked tobacco” …for a colour reference….keep it on the heat a little longer.
4) For a gooey, stringy pizza/calzone add a little more Mozza on top of your pepperoni…and allow that to melt for that gooeyness we all love!
5) For a calzone…fold the contents of your frying pan in half and tip out onto a plate.
For a pizza….simply slide the entire contents onto a plate.
You will need a fork and knife to eat this with!

I use zero carb cheese, 1 carb for ten slices turkey pepperoni, zero carb olives, and the thinnest slivers of green pepper for flavour….but the pieces are so thin they are zero carb…and a whisper of onion. If you wish you can add a Tbsp of tomato sauce…and sprinkle it with more oregano…it is they oregano that infuses the Italian flavour we crave. Sometimes I use tomato…most times I do not….but add more spices.
