This recipe is so great because you don’t need a crust. Just an oven proof bowl. You won’t taste the cauliflower at all and it acts as a bulking agent, making this a fantastic use for this vegetable! This recipe is gluten free and induction friendly.
The serving size below is for four, 3/4 cup casserole ramekins. Make extra for friends (or for yourself. You’re your best friend!)
Deep Dish Pizza Casserole
1 cup riced cauliflower
1 cup shredded mozzarella + 1/2 cup
1/4 cup Parmesan cheese, grated
1/2 Tbsp pizza sauce
Low carb ranch dressing (optional)
pepperoni
Preheat oven to 350.
Mix cauliflower with 1 cup mozzarella. Place into 4- 3/4 cup ramekins or oven proof bowls. Add pizza sauce. If adding ranch dressing, add with pizza sauce. Stir. Add toppings. In a separate bowl, mix 1/2 cup mozzarella cheese with Parmesan. Sprinkle over toppings. Bake for 20 minutes.
Serving Size: Four 3/4 cup servings
I don’t have the carb numbers for this, but it’s super low carb and absolutely delicious.

I like to toss pizza toppings with enough pizza sauce (Pastorini has no sugar) to coat, dump it in a greased foil pie pan, top with cheese and bake. Cures my craving (and my hubby's to a degree) and is fairly quick and easy.
