Regardless the reason or the season, this fruit glaze performs dutifully, for fruit kebabs, fruit pizza, or wherever fresh fruit could use a low-carb lift.
Lemon juice serves its dual purpose as a light flavor, coupled with its non-browning qualities when coating fruit.
Glaze:
1 Tbsp stevia granular or ¼ cup Splenda mix (to taste)
1 tsp lemon juice (or more to taste)
1 tsp lemon juice (or more to taste)
In small microwave-safe bowl, combine sweetener lemon juice. Microwave for 20 seconds, stirring occasionally. Let cool.
Spread glaze over fruit with a pastry brush. Chill 1 hour.

Thanks for this glaze recipe, Jamie. I do a similar fruit tart on a coconut crust and was wanting a glossy glaze on top. Look forward to trying this one!
