OK, so it’s a little late for the holidays. Still, many a recipe calls for sweetened, condensed milk. Even if you could emulate the flavor, how to get that consistency?
It’s easier than one might think. At a net carb count of about 12 for an entire recipe, your own low-carb recipes never tasted better.
Substitute anywhere a can of sweetened, condensed milk is required.
Low-carb sweetened condensed milk
1 cup nonfat dry milk
1/2 cup boiling water
3 Tbsp butter
2 Tbsp Stevia
Combine all in a blender. Mix until well-blended. Makes the equivalent of one can of sweetened, condensed milk.
Hi! I was just wondering what “dry milk” is? I’m from Sweden and I’m not sure we have that here hehehe. Is it like milk powder?? It sounded great to be able to make your own condensed milk cus it’s not so cheap here =/

Isn't dry milk powder 12g carbs per three tablespoons? How did you get the carb count for this recipe?

Hey there! The box of milk I have shows less than that.
Kroger brand is 1/3 of a cup for 12 carbs. 1/3 of a cup is 5 Tbsp.

Hi there. I was wondering what kind of stevia you used. Did you use pure stevia powder, a stevia blend (containing Erythritol), or a clear stevia liquid? I have all of them and would love to make this properly. Thanks for creating this recipe Cleo!
im looking for a stevia recipe for condensed milk and i have all three as well but a loose powder wasnt a definitive as to what type of stevia used. 2 tbsp seems too much for pure stevia since it really packs a punch. if you made this recipe using stevia what did you use and how was the outcome?

If your dry milk is 12g per 1/3 cup, then the whole recipe is 36g, right?
What about using heavy cream instead of the dry milk and water? Do you think that might work?
I wonder that too…if heavy whipping cream could be used? I don't buy dry milk, generally speaking.

I remember a desert from my childhood called “Cherry ‘O Cream Cheese Pie” (spelled wrong, I’m sure) that I still dream about. I remember it had sweetened condensed milk, cream cheese and some other ingredients. I think I’m going to try this in it (If I can find the recipe somewhere). I’ll let you know how it turns out.
Definitely! I find this works perfectly in place of regular condensed milk.
I read in someone else’s recipe for lowcarb condensed milk which used whipping cream that you cannot use only cream as it will clump eventually. Perhaps it is better to try half cream half water?
