Ready for a meatball sub of gluten free and epic low carbohydrate proportions?
And it’s better looking than me looking at my big behinder in the piece below this one.
Low-Carb Meatball Subs
Bread for Subs

Using the standard oopsie roll batter recipe, I used two, small, nonstick bread loaf pans, and then baked the batter at 300 degrees for 30 minutes. I use two separate ‘mini’ loaves for one sandwich. (To make the loaves more savory, I omitted Splenda and used dill and dry mustard).
Meatballs

1 pound hamburger
1 Tbsp parsley
1 tsp salt
1/2 tsp pepper
1 oopsie roll grated into crumbs (1/6 of a recipe)
¼ cup grated Parmesan cheese
1 egg
1 Tbsp parsley

Preheat oven to 375 degrees.
Mix all ingredients. Form into 12-18 balls and bake in for 20-25 minutes (or until done) (You can also fry them on the stove if you prefer).
These can be used for spaghetti squash or pizza as well.
Sauce Mixture

½ cup green pepper, chopped
½ cup purple onion, chopped
2 mushrooms, chopped
10 black olives, sliced
½ cup pizza sauce + ¼ cup water

Change oven temperature to 350 degrees.
Mix these ingredients together in an oven-safe dish. Add meatballs.Bake (uncovered) for 30 minutes.
Assembly:
Change oven temperature to 400 degrees.
Take oopsie rolls and spread with a light butter coating. Top one side with mozzarella cheese. Bake for 10 minutes, or until cheese is melted.
Place roll on a plate.
Add cooked meatball mixture to the roll. Top with shredded Parmesan cheese. Serve immediately.
Makes 6- 6” sandwiches.

mmm sounds and looks good. I just read elsewhere that on Atkins we can use “cold milled flaxseed” in meatloaf/meatballs. As you probably know thats something I was trying to figure out…

angela– I am making about one batch per week, though this week I made a double batch because I’m experimenting. I need more of the tiny bread pans. I can only make two hoagie-type rolls per batch.

How about meatloaf with oopsies for breading…I used to use oatmeal but now with LC I’m not sure how to make it. Have you tried meatloaf?

Hi, Hunter! I have not used oopsies for meatloaf, but I have used the breadcrumbs for various things–including a cheesecake crust.
The only reason I haven’t made a meatloaf is due to kids who hate meatloaf… but they will eat meat balls, which are mini meatloaves, so go figure!
i have a question about your subs made out of the oopsie dough in your directions you said to make the batter then pour into 2 small mini loaf pans and the 2 mini loaf pans make 1 sub . then at the end of your directions you said it makes 6 6″ subs. how can it make 6 subs if you use all the batter for the 2 mini loaf pans. am i explaining myself right. i went to make these today and started pour all the batter between the 2 loafs and knew right away that something was wrong so i scooped some of the mixture out and made 2 small oopsies and 2 mini loaf pans so i need help here as how to divide the batter up
sam– You’re right! A double batch should make six rolls, or three subs! Thank you so much for catching that error.
The loaf pans are fairly big, even when little, and I’ve found I could easily fill two loaf pans!
When I’m in doubt, I start by putting some batter in each and then continuing to distribute. sometimes it takes longer, but it helps me keep the sizes more consistent.

I am currently in mid-battle with Candida and finding low-carb sugar-free recipes has been so difficult.
