Today I am goofing around in the kitchen because it has been too long since I’ve had the opportunity. I am having such a blast! I can smell the… wait, I can’t tell you yet that I’m re-configuring some of my classic favorites, can I? Well, I just did, so stay tuned! (There’s a hint at left)

Now what I had yesterday… First of all, here’s the plan I’m following and here is the introduction post to the Mid-Year Resolution Challenge. While you look at what I’m doing, be sure to do your thing. I am thrilled to give some ideas, but I’m not the person you should necessarily look to for dieting advice (I’m not a paid nosh-a-titian). I am, however, here with you to cheer you on when you’re so skinny you will have to watch slipping through the cushions of your couch.

I ate this:
Breakfast: 1/2 of a cheese biscuit
Lunch: bacon + 1 cauliflower bread stick[link]
Dinner: 4 cauliflower bread sticks + slice of cauliflower pizza
Exercise: Cooking and cleaning my kitchen
Notes: I am really tired today. I took a nap and I’m ready for round two! (Someone needs to tell me it’s almost 8pm)…
What I learned:
Never ever ever assume there’s not gluten or wheat in something unless you research.
I went for a foot-long coney at Sonic last night with a few tater tots (me and Napoleon Dynamite), and when I went to bed I felt terrible. Finally after an hour tossing and turning, I checked their website and there’s wheat and gluten in their chili.
Sonic, I am so so disappointed.
In your chili! *slow head nod, eyes slightly cast down* In your chili.
(This is the same kind of guilt speech I give my kids occasionally. Is it working? More no-no face needed?)
Thankfully, I have this recipe for my own chili-covered cheese tots that contain no gluten at all–or even potatoes for that matter.
Whew! I won’t have to make that same mistake again.
