Happy Wednesday, my pretty pretty pony princesses!
I had the honor of being included in a really neat project by two sisters (Pearl and Serene their site link) who have pretty terrific goals: to revolutionize eating. They asked for my involvement, and I was happy to let them tweak and feature my oopsie roll recipe and cauliflower crust recipe.

Things like this make me so pleased with the tremendous support system we have in one another. I am really very lucky and love being a part of it.
I remember back when the Oopsie Rolls were new in 2008. It took about a year for them to catch on; in fact, I’d almost fully forgotten about them until people started talking about them again. Who knew a mistake in my kitchen would become so popular as a gluten-free bread alternative?

Writer and humorist. I like that. I mean, no one’s funnier naked, though for all the wrong reasons. But I digress.

While you look at what I’m doing, be sure to do your thing. I am thrilled to give some ideas, but I’m not the person you should necessarily look to for dieting advice (I’m not a paid nosh-a-titian). I am, however, here with you to cheer you on when you’re so skinny you will have to watch slipping through the cushions of your couch.

I ate this:
Breakfast:
Lunch: Salad of Spinach + chopped salami + chopped pepperoni + grape tomatoes +onion + green peppers
Dinner: Sonic Tots and a footlong, bunless hot dog
Exercise: 3 hours at my treadmill desk at 1 mph.
Notes: Yay Wednesday. I love days when I feel I’m getting so much done. Unfortunately, my youngest is growing so fast, I need to whisk her out to buy a winter coat tonight! Brrr…
What I learned:
The freezer makes me happy.
In my quest for the perfect zucchini bread (you all know how finicky I am), I have a loaf in the freezer.
I dare not unearth it yet.
I am too too happy with my losses so far, and I’m not sure I want to introduce zucchini bread right now.
Thanks to the freezer, those foods I might eat in an entire day or two can remain in place, patiently awaiting the day I am in need of a little something wonderful without the effort.
The freezer is amazing for portions for cheesecakes, casseroles, and other foods, too. Thank you, freezer.
You’re so cold, but you warm my heart.
Oh crap…is this Wednesday?? I thought it was Tuesday.
I am SO a day ahead… That wasn’t even supposed to post until tomorrow…
This cannot be dieting…I had home made breakfast sausage patties and sunny side up eggs for breakfast! Lunch was a fabulous almond chocolate cake…total carbs 5.5 including cream cheese frosting! And dinner …I want to try this…a chocolate whey and peanut butter shake with cream cheese…reputed to taste like Baskin Robbins Cocoa Peanut Butter Ice Cream! It will total about 12 carbs…but I saved up all day for it! so I want to treat myself! Still the day is well under 20 carbs!
I will be good again tomorrow! promise! This is my first splurge in months!
Oopsie rolls…..I used to eat them with Dr. Atkins strawberry jam…recipe from his first book…and I would marvel how I would lose weight by the end of the weekend…that was my olden days splurge! They are delicious! Ails slathered them with butter …first! Those were the days!
