
While I was testing the Parmesan as a crust in the oven, I went ahead and decided to make an effort to try a pork rind breading for the oven in the process.
The kids actually preferred this to the Parmesan (though I’m partial to the Parmesan recipe).
Oven Baked Breaded Popcorn Shrimp
14 ounce package frozen, cooked peeled, deveined small shrimp
2 egg yolks
2 cups crushed pork rinds
2 Tbsp Mrs Dash
Preheat oven to 350 degrees.
Crush pork rinds into flour (or use the food processor) (You can freeze any remaining). Add Mrs Dash to the bag and shake.
Rinse frozen popcorn shrimp under faucet to remove most of the ice. To thaw the rest of the way, let shrimp soak in water for about 5 more minutes. Rinse thoroughly.
Dip shrimp a few at a time in the egg yolk and drop into the bag of crushed rinds mix. Cover liberally.
Arrange on greased cookie sheet. Bake for 15-20 minutes, turning at about 10 minutes.
Makes four servings.
