Pizza toppings are a staple of people everywhere who enjoy the cheesy goodness of the pizza without the bread. Why not use the oopsie roll to take your lunch to the next level?
Pizza Sandwich
On a plate, I put together 12 slices of pepperoni, 1 ounce of medium cheddar, a sliced mushroom, 2 sliced green olives, and a pinch (1/8 tsp) Parmesan, and I microwaved everything for 30 seconds (until everything was a delicious, melted mess).
Then I transferred everything to an oopsie roll.
On top of that I placed fresh, sliced green pepper (less than 1/4 cup).
It was pretty darned good.
I am placing the carb count at >3 (2 for the oopsies and 1 for the cheese).
(For anyone wanting to know my menu, this is what I had for breakfast about 30 minutes ago.)
Positive Thinking. Setting New Goals
I am mentally re-inducting today since I lost the first 50 pounds to my goal (I promised my concerned kids on New Year’s Eve that I would lose 150 pounds for them this year).
For me, things get stale after awhile, and it’s easy to get sloppy. To remain fully in the game, I made the conscious effort to pretend I never lost the first 50, and am imagining that I’m starting from scratch. Suddenly all of the drive, excitement and dedication came back.
Really, it’s boring for me to say, “Now I need to lose another 50 pounds.”
It’s more exciting to say, “Day one! Here we go!” and see where I end up in another 10 weeks or so.
I feel re-invigorated, have been more excited about exercise, and am looking forward to reaching 50 pounds lost– even if it’s just the next 50.
Thinking in terms of losing 150 pounds this year is a huge goal. Thinking in terms of smaller goals, acting as each is its own part is much more exciting and do-able.
How do you keep yourself motivated?
That pizza thing looks great!
I love those kind of fast and easy micro meals. 🙂
Wow! You have lost 50 lbs???! That is amazing.
Do you have any tips?
My body fat has gone down, but I’m not losing very much.
Thanks!
Hi, tara! Thanks for the congratulations! I exercise at least three days a week, and I think that has a lot to do with the weight loss.
Congratulations to you on your fat loss! Muscle weighs more than fat, so what you might not see on the scale right away, I’ll bet you’re seeing in inches lost!
Wow, congratulations on reaching 50 lbs gone!!! I think its great that you set mini goals rather than concentrating on the long term goal, it makes it much more attainable, right?
That pizza looks awesome and you are so creative with food. I want to be like you when I grow up!!
Congratulations again and keep us posted!!!
I also like to make a similar quick pizza, but I use the low carb Mission tortilla as the base. I’m really interested in trying your breading recipe though.
The Mission tortilla cannot be used in the early stages of some low carb diets.
Hey, Glucoholic!
Do you mean rolling it up in a low-carb wrap post-nuke? I am trying to picture this.
I think it’s an awesome idea!
Thanks so much for sharing it.
You’re right–on Atkins–at least– the wraps are a nono for awhile, but on many other plans, it’s a go. I love wraps. They’re so wrappylicious.
Nice to meet you!
Great idea for a snack. I definitely can use some weight loss, and I love creative & ‘tasty’ approaches. Thanks.
Thank you, Bob! I was just looking at the pizza stuff going, “I wonder if I can make a sandwich out of that.”
Leave it to an American to not only want pizza, but to make a sandwich out of it. If we could, we might also deep-fat fry it and dip it in fondue.
Which, now that I think about it, sounds pretty good…
YUMEEEEE!
I added a burger patty and made it a Pizza Burger! Great dinner!
Well, I make them two ways depending on how much time I have. The first way is quick and dirty and a microwave solution. I take that pile of stuff (varies with mood) and kind of make the stack. Then I take one of those tortillas and fold it in half, kind of like a quesadilla with the pizza stuff in the middle, and then microwave it all for about 30 seconds. Wait for it to cool slightly.
The other method I use if I have a little more time. I take the tortilla, brush a small amount of melted butter over the top, place it on a cookie sheet, put all the stuff on top, and then bake it at about 350F until I see the tortilla becoming crisp and the toppings sticking together. Since it was kind of a homemade technique I usually try to go by sight and not the timer.
Nice to meet you too!
Cleo! Congrats on the weight loss!!!
I love how you are “starting over” – it is so much like eating the elephant ONE BITE AT A TIME!
Let me know what kind of exercising you’re doing – are you loving any of it yet? 3x a week is fabulous!!!
AND I love those pics showing the scrumptious food you’re making! I’m going to have to get in the kitchen and make those rolls so I can use them to make the meatballs now, too!
WOO HOO – you go, girl!!!
Diane
lisa– That is a fantastic idea! There is nothing like a pizza burger. I’ll bet you even gave Red Robin’s Sicilian Burger a run for its money!
Glucoholic– thanks so much for sharing your methods with me! I am going to make mental note. It’s going to be awhile before the low-carb tortillas are on my radar, but I know others are reading…
O how I miss my low carb tortillas…
diane– Hey! Thanks for the woohoo! You have so much energy! I am walking on an incline on my treadmill. I like it because I watch tv and I like to watch tv (Babylon5 specifically is my latest favorite).
I find that when I am sent shows through Netflix or Blockbuster, I’m excited to see what happens in the next episode. And because I only watch while walking, it’s like a reward for good behavior.
And for me, exercise is totally good behavior. *snert*
great blog, i love your sense of humor! 1 have 50 to lose out of a total of 100. i will take it in smaller increments. cant wait to try oopsies!!
thanks.
