I haven’t had much of an appetite lately, but if it’s one thing I love, it’s nachos.
I’ll bet you didn’t know you could enjoy a chipless nacho plate that’s easy as low-carb punch, and with hamburger you made yesterday (or the day before).
Quick Chipless Nachos
layer:
lettuce
mushrooms
cabbage
green jalapeno slices
black olives
purple onion
2 cherry tomatoes cut in half
In a bowl toss a cup of ground pre-cooked hamburger with low-carb taco seasoning mix (check the link for my new favorite mix). Add 2 Tbsp water. Stir with a fork. Place plate on bowl and microwave for 2 minutes, stirring at 1 minute. Let rest.
With a spoon distribute meat across the top of the lettuce and other toppings.
Add shredded cheese (I use pre-shredded colby jack/cheddar). Place in the microwave for another 30 seconds, just until cheese is melted. Drizzle with 1 Tbsp taco sauce and 2 Tbsp Caesar Salad dressing (I use Newman’s Own).
Serve it up!
This is really quick and easy, especially if you keep bagged salad on hand (which I do) and are in a real pinch, especially in hot weather when you need something savory. The lettuce and other veggies do not wilt, and you’ve just enjoyed yourself the easiest plate of chipless nachos ever.
For a more ‘authentic’ feel, you can shred your lettuce and also top with fresh cilantro and parsley.
Addendum: June 10, 2008:
I just made this in a pan on the stove as a meal base. I used 2 pounds of hamburger, 4 Tbsp of the seasoning, and about 1/2-1 cup of water.

I call it “taco salad” but I like the message “nachos” sends. I’m gonna change the language.

I am going to stand firm on the nachoness of this recipe as opposed to salad, but only because you quick-melt the cheese after adding it to the salad for the purpose of having ooey gooey goodness.

Mmm-hmm! Been craving nachos myself lately. Made this recipe today, but when I zapped the beef, I topped it with shredded pepper jack instead. Covering the cheese/meat really seems to trap the moisture, helping the cheese go beyond melted to liqui-queso. I’m out of ground beef, or that’s what I’d be eating right now! ::stares sadly at her plain salad:: Kudos, and keep up the good work! 🙂
I found a tortilla(Mama Lupe @netrition.com) that is 7″ wide and can be used to make taco bowls and nachos, burritos, etc. They have only 7 carbs but 4 fiber so only 3 net carbs per tortilla! They are good as nachos and taco salad bowls.
I LOVE LOVE tamalea and make them alot plus when we travel up the Mississippi delta we follow the tamale trail I like try new ones but my husband like mune best.i use corn meal but dont know the carbs.probably too many. be glad to see yours. i’m writing more of your rec ,can’t seem to stay off of this site
