Chicken pot pie is like a cute pair of shoes: it works in a pinch for so many occasions, and is incredibly slimming. This chicken pot pie is easy, sumptuous, and can be put together in a snap.
Just pre-bake the oopsie crust and pre-cook and chop chicken in advance, mix the ingredients together when ready, and bake. The Alfredo sauce can be home-made, as well!
Just think– in 30 minutes, your tastebuds will be exalting your fantastic acumen from the frosty autumn rooftops.
Chicken Pot Pie
Crust: Oopsie roll dough
3 ounces cream cheese
3 eggs, separated
1/8 tsp cream of tartar
Preheat oven to 300 degrees.
Beat whites with cream of tartar for 3-5 minutes or until stiff peaks form. In a separate bowl, mix yolks with cream cheese. Combine the two bowls carefully, folding ingredients together until just blended.
Pour batter into 2 greased 9″ pie pans and bake for 30 minutes. Makes 2 crusts (this recipe uses only 1 crust).
Filling:
1 cup Alfredo sauce
1 cooked, chopped chicken breast
1 can Veg-All
Preheat oven to 350 degrees.
Combine filling ingredients. Pour into prepared, baked crust.
Topping:
1 cup mozzarella cheese
1/4 cup Parmesan cheese
Top casserole with cheese and bake at 350 degrees until cheese is bubbly, about 30 minutes.
Makes 8 servings.

This sounds like an excellent place to start, but I will probably use a mixture of fresh and frozen peas, cooked carrots onions, etc. since I will probably make my own Alfredo sauce. My question is, do I leave the crust in the cake pan when I add the other pot pie ingredients? Oh, and will the other crust freeze, or not and do I need to store it in the fridge?

travelgirl, You could probably use any thickened soup in place of the alfredo. I'm thinking cream of bacon mushroom soup would be really good, too.
Colleen, You want to bake with everything altogether, and I'd say you can probably freeze, but I've only frozen the oopsies after cooking, not before. So, for that I'd probably say refrigerate, but don't freeze.

Yes, it does, along with some other fairly carbyish veg, like lima beans. You could pick out the potatoes, but at only 6 net carbs per half cup, it’s sometimes worth the carbs to get something ‘like mom used to make’. Of course, you could just go the canned o frozen veggies route and select the veg you prefer from there, too.

Hi Laura! This recipe serves 8. I put better spacing in the post so you could see it easier. I think when I moved posts from blogger to WP, some of the recipes smooshed together sans spacing.

I loved this recipe! Even my non low carb family loved it. I used frozen veggies, instead of the canned. I wonder if the extra crust could be put on top, then the cheese, to be more like the traditional?

I’m going to give this a try tonight, it sounds sooo good and pot pie is one of my favorite foods ever. I’m lazy and will just shred up one of the rotisserie chickens my Kroger will have marked down. I love buying those up and using them for things like chicken salad or just throw chopped up pieces on a salad for a quick lunch. I shred them before freezing and that way I always have some chopped, cooked chicken in the house.
