One of the things you’ve been asking for is a super-quick, savory recipe that can be used for one–or even two–people.
I LOVE mushrooms, and making these stuffed mushroom caps is so easy and quick! I made these up in just a few minutes and was enjoying them hot, right out of the microwave, in no time!
College students, you can make these in your dorm, too, and the clean-up is really easy since you don’t even need silverware. Just cook these babies and pop them right into your mouth for some quick, satisfying brain food.
And then get back to studying. Future generations of social security recipients are counting on you to be amazing and make a lot of money.

I wanted this recipe to be really easy, so I just used pre-formed sausage patties I found at the store.
You can also chop up the mushroom stems you pop out of the caps and incorporate them into the sausage ball mix, or eat them plain. They’re pretty delicious! (I saved my stems for a different recipe I’ll share soon).
Quick Microwave Stuffed Mushroom Caps
2 patties sausage
12 mushroom caps, rinsed and wiped clean
2 Tbsp flax seed meal
1/2 tsp parsley
1/4 tsp salt
1/4 tsp pepper
4 Tbsp shredded Parmesan cheese
Combine sausage with flax seed meal, parsley, salt and pepper in a small bowl (you can even use the bowl you’ll use to cover the mushrooms while cooking). Form sausage mixture into small balls. Place balls in mushroom caps in a microwave-safe dish. Cook in a 1000 watt microwave, covered (I use a microwave-safe bowl), for 2.5 minutes.
Sprinkle with shredded Parmesan Cheese.
Make your mother proud by adding something fresh and green, like a basil leaf or a sprig of well-intentioned parsley.
Makes a dozen mushrooms.
