On Wisconsin! Broccoli Cheese Soup
2 tablespoons butter
1 1/2 cups heavy cream
**2 1/2 cups water
3 cans chicken broth — about 4 cups (I use one box of Swanson Organic Chicken Broth)
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon cayenne pepper
16 ounces frozen chopped broccoli — thawed and drained
1/2 cup red bell pepper, chopped — finely chopped
8 ounces shredded cheddar cheese — sharp or extra sharp
2 tablespoons chopped chives — or green onion tops
1. Melt butter in a large saucepan over medium heat. Cook and stir 30 seconds or until bubbly. Add cream, water, broth, salt, mustard and cayenne pepper; bring to a simmer over high heat, stirring frequently. Add broccoli and red pepper; return to a boil. Reduce heat to low; simmer uncovered 5 minutes, stirring occasionally.
2. Add cheese; stir over low heat just until cheese melts (do not boil). Top with chives if desired.
**For a thicker soup, cut back the water by one cup –
6 servings.

This sounds yummy! I'm guessing you meant "ThickNThin" and not flour in step #1? And the recipe title says it's a crockpot recipe, but the directions use the stovetop?
Netrition states that the seller of this product is no longer in business. Any recommendations for a replacement product? THANKS!

That was an error. Skip any thickeners. You likely won’t even need them.
The instructions say combine butter and flour?
Derp! I will fix that. I removed it since I also remove the thickener from the recipe. Thanks for the heads up!
Is there something else to this I don’t think mine came out right. I reduced the water and omitted the red peppers, but everything else I followed to a “T”??????

Is this supposed to be made in the crock pot or on the stove?
I make mine in the crockpot, but there’s no reason you couldn’t make yours on the stove or in the oven.
Made this stove top last night to rave reviews from the whole gang.
Would you, could you, pretty please post crockpot directions, too? I’m a crockpot novice ya’ see…
Hi, Jenn! I’d guess low for 4-6 hours would be more than enough. Too high a heat or for too long and the cream can curdle.

I’d never made a cream soup, but decided to try this because my husband loves it and since we’ve been low carb dieting, he can’t have his favorite. I didn’t bother with the red pepper, chives or cayenne because he’s very basic and I didn’t think he’d like the little red and green surprises lol. I completely screwed up the cooking time (I was making cream of mushroom and bacon at the time also, so I had two recipes going at once) and it wouldn’t thicken. I added more cheese and a bit of corn starch to try and thicken it and this turned out great. I don’t like broccoli and cheese soup and I kept stealing form his while mine was still cooking lol. This is a great recipe even if you screwed it up like I did lol.
I haven’t ever replied to any of your posts, but I have to tell you how absolutely fantastic this soup is. I make it every week and bring it to work to have alongside my normal roasted chicken lunch. Thank you so much for this recipe! It’s easy and fabulous!
Oh I really wish that the comment about using less water was at the beginning of the recipe instead of the end!!!
