Life’s the berries, and these luscious little strawberries are no exception. Red and juicy, this quick cooking method produces a delicious fruit topping. Simply make more for a decadent pie that’s not laden with sugar. This is perfect for everything from cheesecakes, to crepes or to whenever you need a little berry magic.
Strawberry Dessert Topping
2 cups strawberries, sliced roughly
1/2 cup replacement for sugar
1 tsp + xanthan gum
Slightly mash berries in a heavy bottom sauce pan. Add sweetener and thickening gum. Cook over medium heat to induce a light boil. As light boil commences, cook for five minutes, stirring occasionally, until thickened. Remove from heat. Let cool prior to serving.
Makes about 1.5 cups.
