Summer’s not over yet, but you can still beat the heat with these freezer cookies.Using LC Food Corporation’s LC-Chocolate Fudge Sauce Mix, I was able to make these fun, cheesecakey cookies (you can use any sugar free chocolate fudge mix). I never had to run the oven, so the cool chill of deliciousness made everyone here pretty happy.
Want a little nutty crunch? Drop spoonfuls of the batter over coarse nut flour prior to freezing.

Frozen Cheesecake Nibbles
1/4 cup xylitol
1/4 cup LC-Chocolate Fudge Sauce Mix, prepared according to package instructions.
Enjoy while cold. They melt.

I personally love the LC-Chocolate Fudge Sauce mix. Finally, a fudge sauce without maltitol that can be prepared as needed? Yes, please. The flavor is spot on, it keeps to the perfect consistency, and the sauce can be heated slightly and used as a gorgeous glaze. It’s not as thick as my ganache recipes, but oftentimes you’re looking for some sauce and not a hardened coat of chocolate.
I highly recommend this product, and am proud to award it one of the few 5-heart ratings I’ve ever given.

I’m guessing, based on ingredients (and slightly overestimating to be safe), there are 13 net carbs total in the recipe. I would, then, assume 1 carb per cheesecake bite. 🙂
