In the famous words of that lovable scamp Oliver Twist, “Please, sir; Can I have s’mores?”
What do you mean that’s not what he said? While I’m letting your obvious lack of knowledge regarding Dickens’ revised classics slide, when LC Foods said they had a Granola/Cookie Bites mix and a marshmallow fluff mix they wanted me to try, it made sense (to my brain) to combine efforts into a fun, campy (nyuck nyuck) idea that combines the fanfare of the favorite dessert, S’mores, and low carb, sugar free, gluten free lifestyles.
Is this the epitome of a mixed bag when it comes to desserts? Absolutely. I don’t usually use a lot of mixes to prepare a dish. At the same time, why not shoot for ease on occasion when you don’t have time for a more ambitious dessert?
If you don’t have the LC-Cookie mix, go ahead and shoot for a nut crust. If you want to make your own chocolate custard, do it. The marshmallow fluff here is the real showstopper, so give it a shot!
This dessert is gluten free and sugar free, so enjoy!
Dickens of a S’mores Bars
Bottom layer:
1 cup LC-Cookie bites mix (or ground nuts)
2 Tbsp water (omit if using nuts)
2 Tbsp butter, softened
Mix cookie bites mix with water and butter. Spread into the bottom of an 8 x 8 pan. Bake at 350 degrees for 30 minutes. Cool in the refrigerator.
Pudding layer:
Large box Sugar-Free Chocolate Pudding Mix (makes 3-4 cups prepared)
1- ¾ cups coconut milk
½ cup heavy white cream
Mix ingredients until thickened. Measure 3 cups of pudding and spread over base crust. Refrigerate for an hour, until firm. Slice into squares.
Topping:
LC- Marshmallow Fluff (or sweetened, whipped cream)
Prepare fluff as directed on the package. Allow fluff to solidify slightly in the refrigerator, about 20-30 minutes.
To serve:
Spoon fluff onto sliced bars. Serve immediately. Refrigerate leftovers.
Makes 12 servings.

this recipe calls for a Large box Sugar-Free Chocolate Pudding Mix. I haven’t looked on lcfoods website but the so-called Jell-O Sugar Free-Fat Free Chocolate Pudding is not carbohydrate free. It may not have added sugar but it has maltodextrin and non-fat milk (which has lactose), and the first ingredient is modified food starch for a whopping per serve of just less than 8 g carbohydrate. Just be warned that this in not going to give you a sugar free and probably not even gluten free dessert!

I researched the Jell-O pudding and what I found shows the product is gluten free (those modified food starches can be butthats so it’s important to double check). It’s definitely not carbohydrate free due to the pudding which, you’re right, contains carbohydrates. Very few foods are carb-free, however, so this qualifies as low carb, but absolutely not carb-free. I rechecked the recipe to make sure I didn’t state it was carb-free, and it looks like we’re golden. Jell-o Pudding is not at all a product I use more than, say, once every five years (seriously). I just employed its use in this recipe because it seemed like the right fit.
I just love all of your recipes!, how about a low carb jello ribbon salad recipe, maybe with the stur drinks or the liquid flavored stevia and grass fed gelatin for the jello part and then the cream cheese in between the jello flavors.
