Muffins! You like muffins, I like muffins, we all like muffins. Many of us even have muffin tops, we love muffins so much. OK, well, maybe that’s a little much, since we’re working to whittle our middles…
What if I told you that as someone watching your blood sugar you, too, can enjoy muffins as an occasional treat? Glen at LC Foods Corporation has concocted a clever muffin mix that will make 12-14 generously-sized muffins.
For only 2 net carbs per muffin (each muffin packs a whopping 12 grams of fiber), I enjoyed a generously-sized treat without the guilt and impending blood sugar crashes.
I highly recommend adding fruit and nuts to the mix where you can because they really improve the taste and the texture (I added a cup of blueberries). When I add fruit, I also add a tiny bit of extra sweetener; fresh blueberries on their own aren’t terribly sweet and take from the sweetness of the muffin, leaving you feeling like there’s a lot of blueberry/fruity essence but without the added benefit of taste. I add about 1/4 cup of sugar equivalent for each cup of added fruit (you can add more or less to taste).
Keep in mind, too, that adding fruit and nuts means you’re getting more than 12 standard-sized muffins. Have an extra muffin pan ready to go, or know that you’re going to bake about 14-16 muffins total, depending on the amount of additions you incorporate.
The cost of the mixes for low carb and gluten free also tend to be a bit spendy, so I asked Glen why this is. He let me know that it’s expensive finding quality ingredients that are both low carb and gluten free. Chia, as an example, is pretty expensive. So know that each muffin costs roughly $.75 to make, but if you think about that, it’s really less than buying those store-bought muffins in the bakery for more (you can easily spend $1-$2 for a store-bought muffin, especially if they’re gluten free).
And because these are healthier, you have less guilt as well as more control over what appears in your muffins. I definitely like this product and made a second batch today for kiddos to take to school with them next week.
