Whew, what a day! I have such a sense of accomplishment because I have worked really hard and have one my best to meet my deadline, and I’m nearly there.
One more day of efforts and I’ll be fully caught up again.
Now what I had yesterday… First of all, here’s the plan I’m following and here is the introduction post to the Mid-Year Resolution Challenge. While you look at what I’m doing, be sure to do your thing. I am thrilled to give some ideas, but I’m not the person you should necessarily look to for dieting advice (I’m not a paid nosh-a-titian). I am, however, here with you to cheer you on when you’re so skinny you will have to watch slipping through the cushions of your couch.

I ate this:
Lunch: A heeyuuge fajita platter at about 1:30 this afternoon
Dinner: Slice of new cheesecake (coming next week)[pictured: top]
Notes: So after feeding my hunger yesterday, today I’m not hungry again. That and a busy works schedule meant I ate a VAST serving of an amazing fajita plate that weighed at least a pound and cost me probably 1200 calories. Loaded with vegetables, steak and cheese, some guacamole and sour cream, I loved every bite.
What I learned:
Being on a low glycemic plan means my blood sugar is so stable, I never feel like I might pass out anymore.
I remember when I was eating so much wheat and sugar and I wouldn’t just feel false hunger; I would feel painful, gnawing hunger coupled with blurred vision, faintness and dizziness. That is so not cool, especially when you’re driving somewhere.
Now, thanks to being gluten-free and sugar-free for 18 days, I am only hungry the way a normal person ought to be hungry, (and it’s never painful hunger. It’s controllable). I don’t feel dizzy or flighty or irritable anymore due to not having gluten and sugar in my system.
Some days I am hungrier than others, but no more meals are due to false signals. I eat because I need to fuel my body, not a broken system fueled on sugar and gluten.
That’s worth so much more than pounds on a scale.

Soooo after reading about your recommittment to eating properly, and logging what you eat, I decided I had better do the same. AND was blown away by how much my protions had increased. 🙁

It’s cheese-covered steak over a bed of lettuce with sour cream and guacamole. I think there are a couple of refried beans in there, but I just ignore them, since it’s really so little. I order their nachos essentially, and have them replace the chips with a bed of shredded lettuce. There is nothing like authentic Mexican food low-carbed! I love it!

I love this site I came across it when I googled gluten free lo carb after my se told me I was gluten sensitive and insulin resistant it was the only thing that kept me from crying. I wanted to thank you for work you put into this site

Sorry my update is late. First my check in is dismal from one point of view, great from another. I have reduced my blood pressure meds and gone off the diuretic. My weight has increased and I feel much better. I have been dehydrated for ages. Now I can get on with genuine fat loss.
We have travelled south to the other Island and are staying with family for 2 weeks. It’s a food friendly house for me. Will be able to weigh in and know whether I’ve lost or not next week but not by how much.
Being dairy free in growing old fast. I want your cheesecake.
We are into platters of variety. The Fajita platter sounds like our kind of food.

I too remember those days when I was so overtaken by ‘hunger’ that I could be somewhere and almost not be able to walk, feeling so shaky and crying over nothing 🙁 It was then that I found out I had (been cured now) a gluten and sugar intolerance and irritable bowel syndrome to boot.
I am always surprised how this low carb thing begets different results with different people though 🙂 I started with Atkins and felt a right loser (but not in the right way) when the weight wouldn’t drop off as it seemed to be doing for others. And what do you mean ‘energy boost’??!! Not for me 🙁
Once I twigged that we are all different though things were better. I try not to compare myself to others and their success stories and even though I fall off the wagon quit regularly, I always climb back on.
I finally weighed myself on Wednesday and I am down to 80 kilo’s!! That’s 8 kilo’s less than when I started last year April and I’m quite sure that if and when I can move more, the weight will come off quicker so that’s just down to my being lazy 😉

oh doh! That does remind me that I keep forgetting to take my supplements and even then, the ones I have at the mo are only vitamins, no minerals. And that might be the reason for my extremely crappy sleep rate (not enough magnesium which then doesn’t make the serotonin which then doesn’t make the melatonin…) Face-palm….thanks Jamie, I’ll try to remedy that as soon as possible 🙂 xxx
LOL @ heeyuuge. that is too funny! Jamie, girlfriend you inspire me. This weekend my fiance’ will be occupied with college football (thank you for football season!) so I will be in the kitchen trying to create a chocolate cheesecake (as requested). Actually, I’m going to use your sugar free recipe and create a chocolate swirl-like using unsweetened chocolate. I’ll try to pull it off and I’ll be sure to send photos if it is a success.
I’m going to have to agree with Dee. It is amazing how much you can eat if you don’t hold yourself accountable and jot it down.
Jamie, I’m keeping cheese on hand and maybe this weekend I can make my cream cheese bits so that if food cravings occur, I have something carb friendly to pop in my mouth.
You deserve many praise because of your dedication to this site. I can’t speak for others although some may agree but your recipes have saved me. I’m not the most creative but I have been so inspired by your creations. For that, I have been able to stay on a low carb regimen (Atkins) and have been able to manage my glucose levels. I was taking Amaryl 4 mg twice daily and Metformin 1000 mg twice daily (Type II diabetic). Now, I’m down to no Amaryl and 500 mg Metformin taken once daily. I have yet to exercise but I need to badly (but thankfully I’m losing weight). I’ve actually followed you for a while (followed on Low Carb Examiner) but the first time I did Atkins, I fell off. This time around it’s so different because I realize I am not getting any younger and being healthy is NOT an option. I’m cooking more instead of eating out (never thought about how costly that was). Since I’m in the kitchen more, your recipes have been a ginormous help. Oh, this weekend also, I try and tackle the famous oppsie rolls!

That wonderful feeling of not being a slave to angry hunger pangs is so freeing, isn’t it? I am now down 33 pounds since restarting June 4th and love being in the year end challenge with everyone. I am anxiously awaiting that kahlua cheesecake recipe and am thinking you should let us know ingredients so if we need to order to be ready we can. Can you tell how excited I am?!?! So happy to see you’re losing so well. All the hours of laboring on your insanely wonderful website is sure appreciated to the max.

Today, at lunch I fried a pork sirloin steak…it was the worst thing I had ever cooked in my life! This was my logic….yesterday I loved a chipotle spiced burger…so today, I sprinkled chipotle spice all over my little boneless pork steak! It tasted awful….so I fixed it by dipping each morsel into my homemade garlic aioli…now that is a zero carb lunch…drank hot lemon green tea!
Dinner is ground beef!

I am such a fan of flavor. It adds such dimension to the dish. I am going really low carb for dinner. I’m thinking a caesar topped with chicken breast, but I’m not sure yet.

I gained a pound, I get really discouraged when that happens. But I feel better and that is the main reason I try to stay low carb. I know I will never look 25 again and that’s ok, but I want to be a healthy 58 year old. 🙂 Guess I need to walk a little more and add some more fat to my diet. Just need to lose this unhealthy belly fat. I had an egg scrambled in butter and some bacon for breakfast, broccoli and cheese soup for lunch (homemade) and now I am wondering about dinner. maybe a sausage and some cheese. I can do this.
