Today my oldest son turns 20 years old, so I’m including a picture of him in his Birthday Suit.
He is a total sweetheart, so ladies, if you have a 20 year old daughter looking for a quality guy, he’s available! (He knows how to cook low-carb, too.)
Unfortunately, hubby is laid up in bed with the cold I thought I was getting. I started taking Zinc, Vitamin C, and Vitamin D as soon as I could feel the sore throat in the back of my throat, and so far the cold has not progressed! I am so thrilled. I might beat this back yet!
Now what I had yesterday… First of all, here’s the plan I’m following and here is the introduction post to the Mid-Year Resolution Challenge.

Breakfast: 1 slice of the meatloaf I’m going to share very soon + Diet Coke and vitamins
Lunch: ย Taco Star nachos with lettuce in place of chips + Diet Coke
Dinner: Too full from lunch
Late Night:
Notes: I am thinking the vitamins are seriously helping, and I’m the biggest skeptic on the planet.

That it’s all right to ask restaurants for substitutions when I’m ordering out.
There is an amazing Mexican restaurant locally called Taco Star that my son just adores. Since it’s his Birthday, I wanted to treat him to a fun lunch since his Birthday dinner is being postponed due to hubby’s illness.
My favorite thing on their menu? Nachos! I love them. Like love love. I want to have nacho chip babies with their nachos.
Unfortunately, I am so watching the corn right now, so I asked them to sub the chips out for shredded lettuce, and they were so kind to help me out! I am including a picture of the HUGE container of food I got to enjoy. I forgot there are some refried beans in there, but not enough to ruin me for the day.
There was enough food for two meals for me, plus my daughter was able to enjoy the rest on tacos! I am stuffed, but I’m definitely ordering this again. If you have a Taco Star nearby, yum!
Happy Birthday to your son. You have a handsome young man there! I haven’t lost squat this week….nada, nothing….trying not to get discouraged and instead try to figure out what I’m doing wrong. SO, out comes the notebook to write down everything I’m eating. Didn’t want to have to but I’m going to. Glad the cold didn’t get you but sorry for hubby! I’m a huge believer in alternative remedies! Happy Birthday to your son. I have a daughter who just turned 21 and she tries to eat low carb with me. I have been teaching her about carbs and sugar. She will usually go along with whatever I cook, usually a protein and veggie. We are making tacos tonight and will use lettuce instead of taco shells. By the way my daughter is single, she is a singer/songwriter and is very beautiful and just so happens to be looking for a nice boyfriend, she can’t seem to find a guy around here who isn’t a player!!

My oldest “baby” turned 19 in July! I know what you mean…time flies and I want to hold on a bit longer! She is recently single, still nursing a broken heart, but a beautiful girl inside and out. I’ll share her picture (she’ll probably kill me ๐ ) just in case! ๐

It is hard to kick the grains, but I have also limited grains for everyone else over time, too, so that has made it much much easier.

I will definitely make the meatloaf happen, Erica. My hubby thinks the one I made is a little too bland, so I’m thinking of easy ways to zhoozh it up sans carbs.

I have just gotten over a nasty cold, still snuffling a bit but the cough is gone and so is the fever. Thanks for the vitamin cure tips, I’ll do that next time.
I have been mostly eating this week; bacon, eggs, asparagus, lettuce, fat bombs. Had lovely roast chicken legs yesterday and the day before in an oven tray with stock in the bottom… yummie! All a bit blah… not much appetite (hello keto! ^_^) I still need to weigh myself so have no idea what that is but am still feeling good so that’s that ๐ Well done you and thanks again for the great posts this week (am going to try that pizza crust sweet thing you just posted as well with the rainbow cheese cake) xxxx

I agree with you! Mine is focused on his grades in college right now. That’s really important. Girls might derail him. A pretty girl might melt his brain to putty. ๐

I had a fajita taco salad at a Mexican restaurant last night. They looked at me funny when I said no shell ;). It was super delicious!
