If you’re looking for a fun and easy dessert to serve, be sure to try my Chocolate Peanut Butter Cookie Pizza. It is freakishly easy to make–and you can freeze the extra slices for another day. You know that day– the day you want a dessert, but you don’t want a ton of dessert items in the house (sometimes you just want a slice of something and don’t want to make an entire cake).
I have 2 different cheesecakes (the caramel apple and a basic cheesecake) and some Velveeta fudge in the freezer right now. When I want a slice of the cheesecake, I just microwave on high for about 30 seconds. And really? With the caramel apple cheesecake in the microwave for a brief period, it is especially fantastic.
So if temptation is a concern, go ahead and bake and then freeze (the dessert, not yourself). Pre-proportioning saves time, money, carbohydrates and calories, too.
Now on to how I’ve been doing with my weight loss and continued sussing out of foods to which I’m intolerant or allergic to… Be sure to do your thing. I am thrilled share my progress and thoughts, but I’m not the person you should necessarily look to for dieting advice (I’m not a paid nosh-a-titian). I ate this:
Breakfast: Skipped because of appointments
Lunch: A big chicken salad with plantain chips + 2 sugar-free Peeps
Snack: A small handful of nuts (I was picking through them for the pecans–honest)
Dinner: S.F. Peep (it’s research. stop laughing)+ Chili Cheese Bacon Popper
Notes: Busy day today because my daughter got her driver’s license (she passed, yay!) I’ve been eating on the go. The salad I had was from a local bagel shop. I didn’t even know they had salads. It pays to check around, and I was able to support a local business, too! I am not sure how many carbohydrates I had, but I even ate a crouton or two before tossing the rest out (I have little self control around crispy bits of seasoned bread)…
What I’m learning:
The Super Bowl is this weekend, and it is so ingrained in our culture to chow down and watch some riveting football.
This Sunday I think we’re going to set up a puzzle and make an effort to enjoy the highly entertaining commercials.
Puzzles, crafts, or other hobbies are a great way to keep fingers occupied and out of the snack jar if you’re home with family.
When you’re out, focus on the people around you, drink a lot of water, and enjoy in moderation. We weigh in Monday!
No matter what you do this weekend, put yourself and your needs first, and enjoy the event for the people, the party and the memories. You’ll never remember the snacks in a year, but you’ll remember the great memories you had and how great and in the moment you felt.

Me? I’ve got tentative plans to join a group of my fellow Crossfitters who are having a sort of Paleo pot luck affair. They’re even offering prizes for the best side dish and best dessert, so I’m going to take a stab at the Morning Glory Muffins (https://paleomg.com/morning-glory-muffins), probably with a variation or two. Hopefully this will qualify as a dessert!

Just wanted to report back on the muffins. I did make a few modifications, substituting almond flour and coconut flour for the roasted and ground-up pepitas (didn’t seem worth the trouble). I also substituted regular butter for sunflower seed butter (never even heard of that before). The final verdict… they were not bad, but I would probably double the honey next time since they could stand to be sweeter. They also fell apart quite easily, but that’s a common issue with any non-wheat flour based on my experience.
I didn’t want any prize (turned out to be a very small group), but I have to admit that the host’s banana cake beat my offering hands down.

I think it sounds like you did well! I find that honey will definitely make foods not hold together quite as well, but sometimes letting a bread sit out overnight will help it to dry just enough that it will hold together slightly better. Of course, I say that, but watch my next carrot cake fall apart ever so teasingly…

Not done meatzza for long time but will do it for SuperBowl(and yes, we do watch it in Sweden) with some aged cheese, mushroom and pepperoni.
Going to watch (hah! talk through more like) the S’bowl with friends at their home. I REALLY want to try the Broccomole recipe. I usually bring regular guac so I may make both. I will also make some kind of SF/GF dessert that I haven’t decided on yet….thinking about making chipwiches with your choc chip cookie recipe and Carb Smart ice cream since I have SF choc chips on hand…

I have to work, so I’ll be missing the game, which is unfortunate. I’m not really into sports but I was looking forward to spending the day with my hubby. We usually go all out for the game, even if it is just the two of us. Last year we made pulled pork and put it in four or five different things: pulled pork nachos, taquitos, sandwiches, and salad. We also made bbq meatballs (for him, I find any kind of meatball to be just freaking weird…must be a ground meat thing), bbq mini-sausages, and three-alarm hot wings. I’ve been working the last couple weeks to come up with some LC stuff for our spread this year, well his spread…I’ll probably take a plate with me to work…so far it’s hot wings (un-breaded, of course), your chipless nachos, pulled pork with my new and improved LC bbq sauce (served on an oppsie) and SF chocolate raspberry creme puffs (again, made with oopsies).
