Taco Pizza: Crustacular, low-carb and gluten-free
Looking for something new for dinner? Miss Godfather’s Taco Pizza? Are you diabetic, gluten intolerant or low-carbing and need something you can enjoy on pizza night? At only 23 carbs for an entire pizza, this could be your answer.
First, why a zucchini crust? I wanted something less pungent for a crust, and one which would take the flavors of the toppings without conflicting. Zucchini is mild, healthy, and easy to prepare. This prolific vegetable can be used in the crust in place of cauliflower for any of the pizza recipes.
Don’t panic when you see the calorie and carbohydrate counts. You are getting almost twice the pizza size of the regular cauliflower crust recipe.
Taco Pizza
Zucchini crust
For the Taco Pizza
In the baked crust, layer, in the following order:
Pizza sauce mixed with Picante/Salsa
Seasoned ground beef
Shredded lettuce
Shredded cheddar (you can also add mozzarella and/or colby jack)
Chopped Tomato
Red Onion
Sliced Black Olives
Optional: top with guacamole and sour cream (change nutritional information as needed).
Do not cook with toppings added. Serve immediately. Refrigerate leftovers.

Anna, zucchini seems to work better with the spicy, zippy flavors of the taco toppings as it is slightly sweeter. Cauliflower tends towards pungency, which is more accommodating to Italian flavorings.
That said, I say use what works for you! I just love the zuke in this pizza. Nom nom nom.
Would it be possible to put on the sauce, meat, and cheese and then stick it under the broiler until the cheese melts? Looks really good! Thank you.
Hi, unknown! I don't see why not. Then you can sprinkle the lettuce and other fresh vegetables and additions on top! I just treated it essentially like a taco and put the shred on post-baking to emulate what Godfather's Pizza used to do back in the day.

Hey there! You’re going to make the zucchini crust and then you’re going to layer on the toppings. https://yourlighterside.com/zucchini-pizza-crust-recipe-2/ I hope this helps! I should revamp that recipe, but really, you can use any crust with it, so I wanted to keep it simple.
Recipe that is similar Mix 2/3 c taco sauce, 2/3 c pizza sauce spread on your favorite crust. Cook 1 lb lean hamburger add 1 pkt McCormic or ChiChi’s (red packet) taco seasoning to the meat. Sprinkle over the sauce, add 1/1/2 c shredded mozzarella, top with 1/2 c shredded cheddar cheese, bake till golden and bubbly. Remove from oven, top with shredded or chopped lettuce, diced tomatoes and crushed taco Doritos. (optional, diced onion and black olives)

How much ground beef?? How much of each of the toppings…for the taco pizza..to get that many calories
