I had a request to try and reconstruct the Taco Star Nachos from scratch for you. I will try, but I can’t guarantee anything. This is only because I am too busy eating when I open the styrofoam box of happiness to weigh and measure each of the ingredients. I will see what I can do, though.
In other news, I am so proud o me! I went to Cici’s Pizza Monday night with the chirruns and stuck with a salad bar salad and a pizza bowl (if you ask to go crustless, they’ll make you a “low-carb” bowl in a metal tin). I add in fresh onion and mushrooms from the salad bar, mix, and voila! Instant fabulosity.
The picture you see left is of the Cici’s pizza bowl and the salad. Instagram has a way of making things look kind of weird, though.
So I’m on track (for a quick second, I thought that said “crack”) and feel terrific, with no issues, limited my cheese and went with the fabulousness.
Oh, and I forgot to mention that Monday was a TOPS event. There are typically 2 food events per year. There was so much gluten and sugar that I couldn’t eat what was there, but there were cheese cubes and veggies and fruit. I ate some baby carrots, a couple of snap peas, and a couple of grape tomatoes, some ranch, three cheese cubes, and then two small pieces of cantaloupe and a tiny smidge of honeydew melon. I need to add that to yesterday’s menu…

I ate this:
Breakfast: Nothing. I had such a huge meal last night, I wasn’t hungry.
Lunch: Crock pot soup I’ll be sharing with you soon
Dinner: More of the soup + a small handful of nuts. I am in a snacky mood today…
Exercise: I helped decorate the tree in the front yard. That’s good enough.
Notes: I am paying super-close attention to how I am feeling today because I had more cheese than usual last night. Also, there was some sauce, and I didn’t want to over-sugar (some commercial pizza sauces are ridiculously sweet). I am feeling more snacky/cravey, but that could be my body’s way of telling me to eat more, so I did.
What I learned:
I learned that even though in the past my habit was always to go a little nutty at Cici’s, I focused on my family and not the food (but I didn’t deprive myself, either) and had the most amazing time ever! The kids had so much fun they’re still talking about it today. Sure, the food is fabulous, but we had an amazing conversation.
We sat there for 2 hours talking about things that made me laugh so hard, I was glad the restaurant was almost empty (we were pretty loud occasionally).
Family > Food (even if the food tastes so good you cry a little in your mouth)
Thanks so much for this! I am the one who asked for it yesterday. Perhaps we need to take up a collection so you can buy two. One to eat and one to analyze. 🙂 Next time I am in the front range, I am finding a Taco Star!!
Ha ha! You don’t have to do that! I just have to buy two and share the messed up one with the kids. Like they’ll care. They’re who I share mine with anyway! I love you. You’re worth the effort.
What *is* it with TOPS? I was a member and couldn’t get over how the members would load up on starch and sugar then complain that they couldn’t lose weight . . . . My chapter put out a family cookbook as a fundraiser – it was filled with recipes they shouldn’t be eating! Erg.
TOPS is a weight loss group which tends to adhere to the food pyramid (and so draws their exchange systems from that), but they are so understanding of and welcoming of those of us who “can’t have sugar, gluten or soy.” My group is, absolutely. And since everyone has seen how much I’ve lost, they know what I’m doing works for me! They are super-supportive. But for sure at the Christmas Party, the table had a lot of carby schtuffs I couldn’t even touch.
