I am totally, horrifically late posting your “I’m Thankful for” for Thanksgiving… On top of that, there were so many entries, I picked 70. There’s no possible way I could fit them all into one post. And, yet, even though I’m late, I thought about it and we should be thankful for so many things. And not just on Tryptophan Awareness Day (aka Thanksgiving).
You are thankful for…
So much
I am thankful for my best friend and hubby, Chris, and my health. When my cholesterol tested high last year, my PCP suggested I have a Heart Vue scan done. I did and I have zero plaque and the heart of a 30 year old (I am 52).

As cliche as it may sound, I am thankful for so many things, it’s difficult to pin-point just one…my relatively good (LOL) health, my hard-working husband, my loving daughter, a flexible work environment, simply having a job, good friends near and far …. But the one thing I am most thankful for lately is my sister, Lisa. She and I have been through a lot together the past few years – some good and some bad, but we always know that we have each other to depend upon, and that is so important. My sister is truly my best friend. We know each other better than anyone (probably even more than our spouses!), and we never have to tip-toe around issues – we can just say what we feel. Unconditional love is the best! My sister lives clear across the country, and I don’t get to see her as much as we’d both like. Fortunately with cell phones, skype and the internet – we stay connected. This Thanksgiving, I am so thankful to have my sister…and I’m going to make sure to tell her, because I probably don’t say it enough.

I am most thankful for the adult daycare center that takes my dad (w/Alzheimer’s) Monday through Friday. I would go insane without them!!!!

I am so happy that this year I can say that I have a job. Last year this time I had been unemployed for a year and a half and my unemployment was running out. Without sounding pathetic I gotta tell you that my beloved cat of 7 years developed diabetes and fatty liver disease around this time . My mom helped me to pay for vet bills and he ended up with a liver biopsy and a feeding tube for a few days. But even with me hand feeding him for a month and giving insulin shots I had to have him put down a week before Christmas.
I got a job as a Social Worker again (yay) in May and am working to keep handicapped people in the community and out of nursing homes. And I got a kitten right before Christmas! So this year is VERY different from the last. I have been low carbing and LOVE your recipes. I don’t always stick to my diet but I have you guys to give me hope.

One thing that I am thankful for is that I decided to go low carb again (with a Paleo focus this time) and that I found your blog so that I can still enjoy some of my favorite recipes. The last time that I went low carb (2004), I lost 80 lbs, but I wound up gaining it all back (and then some) because I couldn’t enjoy the foods that I love. Thanks to your blog (and a few others that I use regularly), I am now able to enjoy so many more foods and have lost 68 lbs thus far! I’ve always thought that my PCOS was a curse, but if I think about what it has helped me discover in terms of food, health, and fitness, I can think of it as a blessing from here on out. If I didn’t have PCOS, I would probably still be eating SAD and be quite unhealthy and not even know it.

One thing I’m thankful for is access to health care. I have had a trying year health-wise, and I can’t imagine what it would be like having to limit my care due to health care or insurance issues. It’s one thing I would have definitely taken for granted had I not relied on it so much this year.

It took several weeks before he was able to talk, walk, or eat by himself again. Amazingly, he is now back to normal. I feel like this window of time is a gift.

The one thing I am most thank full for is.. Having lived thu.. This horrible Chemo. Since June I have completed 3 rounds of 3 day of CHEMO.. 2 slapped me in the hospital..first time it caused a bleeding ulcer inside my tummy.. Almost took me out,,I had 2 hrs left they told me in E.R … I got to the hosp and had to have 7 units of blood… Then 6 weeks of healing.. next round..3 days
… Back in the hospital as my blood did not come back up as it should… Plateletts were….1….not good…. White cells were..0.7…really not good.. So I was put in the hosp for 7 days to keep me away from anyone that might sneeze around me.. As Dr said he could not save me if I got sick as I had nothing in my blood to work with..yikes.. Ok.. Round three this time he only did a 1/2 dose.. And it did not do anything crazy ..THANK GOD… Then the P.E.T. Scan showed ..my body was clear of cancer. We were SHOUTING FOR JOY….. Again THANK GOD.. Now on Dec 5th I must go down to Atlanta, GA and be briefed for .. MY ….BLOOD MARROW TRANSPLANT I ask does it ever end..?? Dr said if I did not do this the cancer will come back.. So.. This old gal is going to have it done.. So all that said…. I AM VERY THANKFUL TO BE HERE RIGHT NOW.. ENJOYING ALL YOUR LOW CARB RECIPES… That hot dog thing is going to happen tonight for dinner…can’t wait…
