Do you have 30-40 minutes to make dinner, sure! I like easy to make dinners too, but sometimes I want something a little more complete than home made quicky meals. Here is a recipe that I love and it taste like it took a heck of a lot longer to make. This is a complete meal as well, not just a main dish. Healthy, balanced, delish goodness 🙂
What you will need:
4 Boneless skinless chicken breast sliced in half horizontally
1 Tsp kosher salt
1 Tsp ground black pepper
3 Tbsp Coconut oil
1/4 Cup Almond flour
1 Red onion, sliced
1 Bunch fresh thyme leaves, chopped
1 Cup low sodium chicken broth
2 Lemons freshly juiced
2 Tbsp butter
1 Bag of spinach, 9 ounces
Here is how you make it:
Season the chicken with the kosher salt and pepper. Heat a large pan over medium heat and add the coconut oil. Put the almond flour in a dish. Dredge the chicken in the flour and add to the pan until cooked completely, about 3 min each side. Transfer to a plate and cover with foil.
Add the red onion and fresh thyme to the pan and cook on low heat. Stir this occasionally, and it should be done in about 5 min.
Combine the fresh juice from the lemons with the chicken broth in a bowl. Turn the heat up on the pan to high and deglaze the liquid mixture. Let these liquids reduce for about 10 min. Remove from the heat and whisk in 1 1/2 Tbsp butter. Season with salt and pepper to taste.
Put the spinach in a microwave safe dish adding 3 Tbsp of water, cover loosely with plastic wrap. Microwave until wilted, about 5 minutes. Drain and toss the spinach with the remaining 1/2 Tbsp of butter. Season with salt and pepper to taste.
Arrange the plate with the spinach on bottom, chicken in the middle, and the onion on top. Spoon the reduced sauce over this delish dish and enjoy!
