Good morning! I hope you had a tremendous weekend!
Today I weigh in at TOPS, so I’m not eating until I hit Taco Star for my Monday Nachos with chips afterwards. I can’t wait! It’s been a week, and I miss them. I keep worrying that in this economy I’ll drive up one day and the amazing little drive-thru restaurant will be gone, so I keep my fingers crossed and grab the carb (erm car, but this is so awesome, I left the typo) keys (note: never drive with your fingers crossed. Or your eyes for that matter).
I ran some nutritional information on what I am guessing the Nachos contain (I input everything into Fitness Pal) and it’s about what I thought… Keep in mind that I am overestimating everything slightly to be safe. I’m not quite ready yet to pull the nachos apart and weigh everything individually (I will soon, though! Today I am so hungry, I could eat a whole elephant. Which Disney movie is that from?).
Nutritional information for about a pound of skirt steak, a schmear of refried beans, the chips, the guacamole, fresh salsa, green and red taco sauce, sour cream, and lettuce:
- Taco Star Nachos with the chips: Calories: 1731, Carbohydrates: 73g, Fiber: 15 g, Net Carbohydrates: 60 g, Protein: 118 g, Fat: 109 g
- Minus the corn chips only: Calories: 1451, Carbohydrates: 35 g, Fiber: 15 g, Net Carbohydrates: 20 g, Protein: 114 g, Fat: 97 g
- Minus the chips and refried beans: Calories: 1361, Carbohydrates: 18 g, Fiber: 9 g, Net Carbohydrates: 9 g, Protein: 109 g, Fat: 97 g
Of course, I go for everything since it’s my only meal of the day on Mondays, and it hasn’t affected me negatively. I think, for me, shaking things up once a week (and knowing I have no corn issues) really makes this way of eating amazingly bearable. The extra carbs here are totally worth it for me, and judging by my numbers so far (over 60 pounds lost since the end of August), it hasn’t been hurting. Of course, this is where I insert my typical mantra about doing what works for you, etc, etc…
Now for the weigh-in!
It’s Monday, and you know what means: TOPS weigh-in! Weigh-in, in fact, for all of us taking part in the Mid-Year Resolution Challenge. Why weigh Mondays for this challenge? Because it typically keeps people honest on the weekends, the most difficult days to stick to healthy eating and habits. I know without Monday weigh-ins, I’d probably be much more naughty. Knowing I have to face the scale each week keeps me honest because I know short-term choices can have longer-term repercussions.
This week I am down 2 pounds!
My total losses so far since August: 62 pounds
Total for all of our friends so far in this Mid-Year Resolution Challenge: 1492.79 pounds!
Keep it up, everyone! We have about 2 weeks left before New Year’s Eve!

Breakfast: Nothing. I don’t eat before TOPS weigh-in
Lunch: Taco Star Nachos
Dinner: 1 white chocolate button + 1 60% chocolate button + Samplings of Chocolate for review (it’s a rough life)
Notes: Today at TOPS, even though I didn’t want it, someone gave me a cookie. I waited until she was looking the other direction and tossed it over the fence into an adjoining field. That’s our little secret.
What I learned:
I am learning that the holidays really aren’t that tough for me as they used to be. I’m not sure if it’s because I get to enjoy the occasional higher-carbohydrate meal of foods that don’t affect me badly, or if it’s just not caring about food as much as I used, to, but I’m really excited for the last 2 weeks of this challenge.
Woo hoo Jamie. Way to go!! 62-pound weight loss is fantastic, especially with the holiday season upon us. Just take each day as it comes and make it the best low-carb day (or Paleo day or whatever day you want). That’s what I do. Love the emails and the new recipes. Will be trying some of the desserts/cookies, etc. on my office teammates who especially want to take off a few pounds. Even my “significant other” loves the new treats. I am so glad! What I didn’t say was that it was so windy that the cookie came flying back. It barely made it over the fence even though I was right next to it!
Where do you get these Nachos? Where is Taco Star?
If you live in Colorado, you can findd Taco Star at several locations. If you don’t, it’s a little more depressing because the amazingness that is TS isn’t national yet. That said, you could probably get the same, incredible dish from any MExican restaurant–just have them hold the chips most of the time and sub in shredded lettuce instead.
